BBQ sandwich advice?

Hey :D
A relative brought us a bunch of North Carolina BBQ which is totally cool but in just one day I've run out of ways to serve it. What would y'all serve it with? I'm thinking I need beans, like those soupy red ones, but all I have is a can of kinda runny red pinto beans. Or maybe a little corn!? Or I'll make a salad??? Potatoes or fries don't seem right..

1. cole slaw on the sandwich,
fried okra on the plate beside it. And don't forget the hush puppies. And some greens, if you like.

Hells yeah, I have some in the freezer, this is the time to get it out. We really needed something green with all these sandwiches.

I have a few hours so maybe I should figure out how to make hush puppies too, I mean why the hell not :p

4. that's a good idea too
to save at least a couple of sandwiches worth! Except now with the okra and my cornbread (I just found a recipe) we might finish it all :9 They gave us a little container of coleslaw, with our BBQ batch, it's red though not green, but it tastes the same :shrug: Gonna eat it, that's for sure!

5. Nothing wrong with fries on the side.
It's not "NC authentic", but it's still yummy.

And some homestyle green beans go well with it too, IMHO.
(Of course, I think they go with everything, I'll admit)

10. If this is Eastern NC BBQ, do what my parents did...
In 2004 I went back to Idaho for a family reunion, and made a batch of eastern NC BBQ.

Next thing you know, they're using it in spaghetti sauce, and asking for the recipe.

I'd freeze some for repeats later on, but if I got really crazy, I'd put it IN mac 'n' cheese. :D

someone else said they'd seen it made into spaghetti sauce! :wow: Pasta if definitely better with pork I think so it makes sense. I have to be careful getting creative with cooking because I'm not that good at it, but I did make the frozen okra tonight so that was a good idea, and luckily easy (I mean hard to screw up)
I almost cooked little hush puppies, my first ever, only I baked them too long so they were like rocks.

We hardly made a dent in it tonight, I think I will freeze some now so we can have something different for dinner tomorrow.

I make a lot of cooking mistakes :blush: the cookbook would have helped if I'd just looked I guess.
I was close though, I think I had the mix about right. I'll try again when I get more eggs, I'm printing the recipe out.

Our months of wishes & hopes for NCBBQP have been answered :crazy: and answered..
