Take one leftover baked potato..
Cut it up into nice chunks, fry it in a lot of olive oil (almost tot he point where you're deep frying them) till golden brown, drain on paper towel, serve with sea salt, black pepper, and Ketchup, and you have a wonderful midnight snack!

I love the way some of the loose skins puff up, and the fact that the potato has boon cooked once already imparts a nice texture to the potato.
