I use vinegar, soy sauce, and lemon. However, I think Kraft makes a decent sweet and sour sauce. I sometimes eat lumpia with ketchup, because I'm a heathen like that.

I have a cousin that mixes mayo, hot sauce, and ketchup for lumpia. It's surprisingly not disgusting, but not something I'd eat every day.

Also, I'd eat lumpia first and save the pancit. Pancit stores well, but lumpia gets stale fairly quickly. Soggy lumpia is gross.
