What's for dinner tonight DU?
We're having Provolone Cheeseburgers, Fries, and a Fruit Salad consisting of Peaches, Black Grapes, and Raspberries. :9

14. It is potatos and eggs - kind of like a frittata but not cooked
in the oven/broiler. I do it with 4 potatos, 4 eggs - saute in large pan tiny cubed potatos (do not use frozen) in olive oil(you will need a good amount)until browned, remove from pan. Mix into 4 slightly beaten eggs, add all back into pan. Let cook until starting to set, invert and slide back in until cooked.

This is a traditional dish from Spain.

BTW- 4 potatos, 4 eggs feeds the three of us and still gives a little leftover for Little MB to take to camp tomorrow.

15. It's one of my favorites...
Although, I know they give it to us because it's difficult to dig a tunnel with the the spoon.

I think the spoon makes the Ice Cream taste better.

19. Recovering from my jam-making bonanaza yesterday.
In other words, making as little effort as possible (maybe even skip dinner).

I made peach preserves, white nectarine preserves and strawberry preserves (and I still smell like strawberries today). Everything set perfectly (yay!), but I'm seriously pooped.

The peach were a last-minute addition to the lineup, as they were requested by the Boy, and I pretty much can't say no to him about anything. :7

I've also now obligated myself to make apple butter in a few weeks when the heirlooms start coming in, as that's his other favorite. :loveya:

I entered some boysenberry jam once, but it didn't win a ribbon. I did get a third place ribbon for barbecue sauce a few years ago though.

I took some scallops out of the freezer last night (enough for just me) but had surprise company and didn't cook them. Tonight my son is home. We may have the scallops as an appetizer, I guess. They really have to be cooked TODAY (or they get thrown out) but there's not enough for both Tim and I.

28. just something I make up when I haven't planned very well
a bag of frozen hash browns, cooked in a skillet w/ onions, garlic, and cut-up hot dogs. Once in a while I'll get fancy and add some peppers. I also make this recipe using ham or sausage in place of the hot dogs. Sometimes I serve it w/ a fried egg on top, as though it were corned-beef hash.

I usually eat this w/ a small green salad.

33. The key factor in making it a Swiss Enchilada
is the use of cream (and plenty of it). According to James Beard dishes using cream are called Swiss (Suiza) in Mexico.
The ones I made had chicken/onion/tomato filling. Cream, flavored with chicken bullion is poured all over, and then they're topped with cheese and baked.

42. Homemade crust -- all-purpose flour with a little whole wheat mixed in
It's inspired by Peter Reinhart's cold-fermented dough recipe in "American Pie: My Search for the Perfect Pizza". Great book.

This one will have fresh mozzerella with heirloom tomatoes and basil from our garden. Maybe some imported parmesean cheese. We'll probably throw some chicken sausage on it too.

I made spaghetti last night, homemade sauce and garlic bread and I have some left over sauce. I made some pizza dough last night before I went to bed and popped it in the fridge so it should be ready to go by the time I get home.

Ground bison, spicy Italian sausage, zucchini, mushrooms, onions, red & green pepper, lots of herbs and a head of garlic. So thick my spoon stands up in it without assistance.

And a mixed baby greens salad.
