6 medium peaches, peeled and depitted 10 large strawberries, detopped 1 1/2 tsp vanilla 3 cups heavy cream 2 cups whole milk 4 1/2 cups sugar 7 lbs ice 1 box of salt Ice cream maker
Puree fruit. Add vanilla and sugar. Put in ice cream maker container. Add cream and milk. Start ice cream maker, and add a 4" layer of ice around the container. Cover ice with salt. Add another layer with salt, as before. Keep adding ice and salt up to the top of the container. Keep replacing ice and salt as the ice cream maker churns, and pack it down with an instrument (a wooden spoon works well). When the churn is too hard to crank, or shuts itself off if electric, the ice cream is finished. Remove the mixer parts and replace container in the icewater to cure for 15 minutes, then transfer to containers and put in the freezer.
Let me tell ya, I like to make ice cream, and I've made a lot of different kinds, but this one is really good!
