I need some good picnic recipes... anyone have favorite picnic food?
I've got the dessert figured out but need something easy to transport and eat -- So - good sandwiches? Or other meals that can be carried together in tupperware, like a good stir-fry or curry?

I welcome all tofu/vegetarian recipes.

Thanks for any ideas! I haven't been on a picnic in ages, so if you have any other good ideas or suggestions of what to bring, I'd love to hear them.

Sorry, no recipe. All I know is it takes just about forever to make, if you eat one before the picnic starts you get smacked (hard) and it's impossible to have too many.

we didn't have a lot of money so when we went to the drive-in movies, my mom used to make dinner and pack it to take with us. One of the best things she made and I have made for other picnics and people love them are cold hamburgers (actually room temp.)

Make these just before you leave for the picnic.

1 lb. ground chuck
1 egg
1/2 c. grated parm cheese
salt, pepper, garlic powder

Mix well and either fry or grill adding a little more pepper and garlic powder to the outside of the patties.

Allow to cool just a little and while still warm put on a bun with pickles, an onion slice, and tomato slice.

Wrap in foil and pack to take. As the burgers reach room temp, all the flavors will mingle so well that they don't need any condiments on them.

Sounds funny but if you do this, all the wonderful flavors meld together and they are awesome! I made them once for a big outdoor potluck and a couple of friends stole them all and hid them for themselves. So, it's not just the memory connection. LOL

(If you aren't a veggie, that is. My husband stopped eating meat all together and I only eat it rarely now and don't keep it in the house but I really miss having these once in awhile.)

It's made with Crab Delight, which is imitation crab meat.

All you do is get a package of Crab Delight, and coursely chop it.

Add:

2 stalks celery, minced
2 or 3 green onions, chopped

A tablespoon of sour cream
About a half-cup mayo (adjust to your taste)
A half teaspoon lemon juice.

Season with pepper and salt. Add some celery seed if you like.

Mix well, let it sit in the fridge for a couple of hours so that the flavors meld.

I take this to picnics, pot lucks, etc, and everyone always likes it and asks for the recipe. It's easy easy easy to make. You can prepare this in five minutes.


If youre going to a gathering where there'll be a lot of people, just double this. The Crab Delight is really inexpensive--only about $1.75/package.

11. This is one of my favorites..
Along with some grilled chicken...mmmm...it's really delicious.

Black Bean and Corn Salad

2 15 oz cans black beans, drained & rinsed
2 12 oz cans white corn
4 medium size tomatoes (roma are the best) peeled, seeded and diced
2 red bell peppers, diced
3/4 c. red onion, diced
2-3 fresh jalapeno peppers, seeded & diced
1/2 c. lime juice (takes about 5 limes)
1/2 c. olive oil
1 bunch cilantro, minced
2 lg garlic cloves, minced
3/4 t. ground cumin
1 t. salt
pinch cayene, 5-6 dashes of tabasco and salt and pepper to taste. Make early in the day or day ahead so flavors blend.

14. Here's a great recipie for "Spanish Tortilla"...
First, let me say, this has nothing to do with the torillas you get in the supermarket. Ok, here goes.

Peel and cube about 2 decent sized potatoes, or 3 smaller onces.

In a good-sized frying pan, preheat olive oil until it's at a good frying heat.

If you have a deepfryer, this will work as well, but you'll still need the frying pan.

Put the potatoes in, and fry them for about 8-9 minutes. The olive oil should just
cover the potatoes.

While the potatoes are frying, take 3 eggs, and whip them until they're well mixed, even a bit frothy.

One the potatoes are beginnign to golden, remove them from the heat and drain the olive oil.

Put them back on the head, and add the egg mixture.

Cook on one side until the edges begin to solid, then flip it. A plate will work well at this stage. Put
the plate on the frying pan, and quicly flip it so that the cooked side is up, then return the tortilla
to the pan to cook the other side.

Once done, it might resemble a quiche without the pie crust. This is good.

Now, you can take it cut it up, and enjoy.

Note: My father has successfully used McDonald's French Fries in place of actual potatoes. Also, I like
to Jazz mine up a bit with peppers, mushrooms, and onions. If it turns out, it's to die for.
