I'm Looking for a recipe for Potato salad
Nothing with egg, just a simple potato salad.I have a craving for a simple home made potato salad. theres a deli not far from me that I use to get the best potato salad at. Well, they are under new management and I think the original owners took the potato salad recipe with them.Anyone have a good recipe?

1. Well, I use potatoes, celery, onion, and yes, egg in mine.
Mix it up with miracle whip or mayo, and little dab of mustard too. Salt and pepper to taste. :9

2. Our family favorite has been
boil up some diced potatoes. Drain them as soon as they are fork tender. Toss in chopped celery, onion, real mayo for the dressing S & P, sprinkle paprika on the top for some color. We sometimes add eggs, but not always. It's a simple, basic recipe, nothing to get in the way of the flavors of the ingredients.

5. My favorite is to boil red potatoes with the skins on until fork tender,
then peel and dice them. They don't get waterlogged that way and keep their shape better after mixing. I add diced onion, sweet pickle relish, chopped boiled egg, celery seed and salt and pepper to taste. I use enough Miracle Whip or mayo to get a creamy texture and enough mustard to add some color and a little zing.

6. Red potatoes are great for salads
They are waxy instead of starchy and will hold their shape after cooking. Plus the red skins make a nice color contrast.

7. I use chopped onion and chopped dill pickles in mine, and I use some of
the pickle juice in the dressing, which for me is miracle whip-type stuff, a little yellow mustard, some paprika, some chopped parsley, some black pepper and some celery seed.

10. Feel free! And remember, it's cooking...follow your own taste!
When baking, you pretty much have to follow 'rules.'

I use dill, and green onions.
It's my secret ingredients :D but ourpotato salad paths won't cross probably, so it's okay to tell it!

I make my own mayonaise too but that cancels out the "simple" part I think.

12. I've never tried dill in mine, but I'll bet I try it next time. I also like
to add sliced black olives from time to time, but many people don't like them so I have to consider who'll be eating it with me.

14. don't BOIL your potatoes
Simmer them. If you BOIL them, the outside gets mushy before the inside gets done and then you have Mashed Potato Salad.

Leave the skins on, quarter the raw potatoes in water to cover (with salt and pepper), and SIMMER them until fork tender. Drain immediately and let cool.

If you used russets, peel them now. If you used redskins or another non-baker, don't peel. Cube your potatoes.


My popular old-fashioned recipe from my New England grandmother is as follows:

Cubed potatoes
Diced celery
Diced onion (sweet onion is even better)
Diced dill pickles
Black olives
Sliced hard-boiled eggs
Best Foods or Hellman's mayo
A squirt of yellow mustard
Dill weed
A tablespoon of sugar
Salt and pepper to taste

Of course, any salad using mayo and eggs should be refrigerated completely.
