Who's got a really good lentil soup recipe?
I want to make it over this holiday weekend. I got the lentils, garlic, onion, carrots, sausage and celery. What else would make it really good?

1. Fresh thyme is wonderful. And I would suggest browning the sausage
really well in the soup pot so you get all the yummy bits from the sausage incorporated in your soup.

2. I'm wondering if pancetta would be better than sausage because
it's smoked. Have you ever used little dice of pancetta in your lentil soup?

Yes, pancetta is FABULOUS! And if you happen to have a hambone (not that anyone does), that would be lovely too.

I also concur with the person who suggested bay leaf. I always throw a couple in soup.

4. I like to saute the sausage and onion in sesame oil
and then add tarragon and a bit less than a teaspoon of cayenne pepper.

Admittedly, it's a bit unconventional, but mmm'mmmmmmmm tasteeeeee! :)
