cold, snowy day soup thread - what do you put in yours?
You know those days when the kid is off school, everyone is home, work is done, no one wants to go out since the forecast is so bad it's sleeting, and they never plow your street til last? That's when you clean out the fridge and throw everything into the pot with all those beans and lentils you never got around to making Mjuddara with. My mom called this Mustgo. Everything must go! I went showshoeing for a bit and found my husband raiding the fridge with abandon.

He put in Lentils, 15 bean soup mix, leftover rice, noodles, miso, sauteed potatoes, carrots, onions, one green pepper, one red pepper, a bit of curry powder and god knows what else.

What do you put in yours?

2. Pasta, Beans, Cheese Rinds, Tomatos, and a can of V8
I used to feed it to my kid brother...hence why we call it "puke" (He thinks it looks like the time he ate too much spaghetti.) It's good though.

3. I call mine souper bowl soup
Four cooked, chopped-up Italian sausages, a sauteed green pepper and onion, tsp of garlic, can of stewed tomatoes, can of tomato soup with a can of water, four beef bouillon cubes, four cups of water, simmer for a while. Five or ten minutes before serving throw in a handful of uncooked pasta, a zucchini, a yellow winter squash, some fresh chopped mushrooms. You can also throw in some cooked carrots, broccoli, green beans, or cooked noodles at the end. Serve with Parmesan cheese.

Great thread by the way! I was cooking a pot of this soup when I saw your thread.

5. the mushrooms were, well, not very edible....
or we would have tossed those in, too.

This kind of day just calls out for soup! And a crusty bread.

10. Soup is a wonderful food!
I've said this more than once that we should put together an on-line DU cookbook.. especially with easy to make cheap meals. And with foods that you can prep early and can serve to the kid that's starving at 4 PM and to the one that gets home at 8 PM and all in between. I would donate extra to DU to get access to it. Sort of like the heart campaign. By the way, again, great, great thread for moms!

6. usually, I mix a
chicken noodle with chicken in rice soups....makes it a bit heartier. If I make my own, its usually chicken noodle.

Milk

Serve with Sour Cream, Grated Cheese, and Chopped Green Onions or Chives.

13. I'm making GUMBO!
I picked the crab this morning and boiled the shrimp shells with the crab shells for some fish broth to add to it. I made my roux to the point of being almost a milk chocolate color, and my chicken broth had been standing by since last night when I made it.

The oysters are standing by as well.

Oh yeah, I'm gonna have some GUMBO for dinner--and probably for the next three weeks because I ended up with more gumbo than I have a pot big enough to hold.

GAWD do I ever have gumbo. I have two pots of the stuff simmering away.

Have I mentioned lately that I am now convinced that the Donner Party actually was made up of one snowbound mother and her family with about forty gallons of seafood gumbo in the house?

Yep, I'm having GUMBO for dinner!!!

We are right in the middle of blizzard. Wanna come hang out with us? :)


The crab came from Schnucks' (A midwest grocery store chain) seafood department. The seafood manager has become a buddy of mine in the last couple of years and she often has some really good sales. This week she had Alaskan King Crab on sale for $6.99 per pound. She also had a sale on fresh shrimp.

I HAD to do it, I really did...

We MAY be able to dig out of this snow in a day or two--I dunno. They are saying the wind is over 40 mph when it gusts, and THAT is causing a lot of problems combined with the 12 inches of snow that has come down thus far. We are under a blizzard warning up till Midnight tonight--maybe it will be better in the AM.

The schools have already begun to cancel for tomorrow, so I've got at LEAST one more day at home. Looks like tomorrow off too. Maybe we'll bake bread to eat with leftover Gumbo...

27. our schools are closed again tomorrow as well
I was outside shoveling today with my son, we also did a little snow-shoeing. We had about 6-7 inches and now it's freezing rain.

Maybe he and the husband can bake cookies and scones tomorrow....

ps. I assumed from the Gumbo that you were in Louisiana or something...

16. Italian Chicken and Barley Soup
Chicken breast in bite size pieces, browned in olive oil

48oz chicken broth

Chopped onion, two stalks chopped celery, one or two chopped carrots

Half cup white wine or dry sherry

Two cups water

1 tablespoon lemon juice

3/4 cup pearl barley

14oz can diced tomatoes

4oz tomato paste

Tablespoon Italian seasoning

Combine all except tomatoes, paste and seasoning, bring to boil, simmer for an hour. Add rest and simmer for twenty minutes

squash, oregano/thyme/parsley, whole head of garlic, double cream, chicken stock cubes and ground nut meg. Top up with a dash of brandy and serve with a knowing smile.

Lentils ,tomatoes, ginger root, lemon juice, garlic and onion, and a few spices. And what ever vegetable I have on hand.

28. Here's my quick soup recipe:
Brown onions, garlic, and Italian spices (such as oregano, fennel, basil) in some olive oil
Use V-8 or other vegetable juice as the base
Cook vegetables of your choice in the V-8 juice
When they're soft, dip several cups out of the pot and puree them (with yogurt or heavy cream if desired) in the blender before returning them to the pot

34. Well, I'm doing beef stew in the crockpot because just last week we
had a delicious minestrone, courtesy of my Italian American coworker's recipe. She's promised me her lentil soup recipe too since hubby went nuts over the minestrone. I'd do ribollito but I don't have all of the ingredients. I loved it when I had it in Tuscany (it's a great bean and vegetable soup).

I don't keep stuff around very long. I'm a big leftovers eater for lunch every day. It saves lots of money and I love leftovers!

Hmm, reading this thread makes me think I should have more stuff around for a snowy day soup...

36. I made homemade chicken soup yesterday in a large pot
I put in water, chicken boullion, 6 chicken legs and three breasts.

I had that simmer for 3 hours.

I then removed the chicken and let it cool so I could pull the meat from the bones.

Put the chicken meat back into the stock.
Cut up about 9 carrots
Cut up about 9 or so celery stalks
Chopped two onions...

I then prepared the egg noodles (store bought and threw them in)


had it simmer for about 40 minutes...
and voila!

Chicken soup.

I served parmesean cheese with dinner to sprinkle on the soup.
