Whenever I go to a restaurant, such as Thai, I ask for the dish to be extra spicy.

I also think your taste buds/sensitivity also mature with age.
Except now that I'm in my 60s I don't like the hot sauces as much as I used to.

8. I meant tolerance as in, needing more to achieve the same effect.

Same as with tolerance to drugs.

When I was a student in Japan, there were also some Thai students at my school. They complained that the food in the university cafeteria was bland, so they started bringing Tabasco sauce and putting it on everything.

Evidently, people who grew up with spicy food have more of a tolerance for it.
