they are sort of my default setting when i go out for lunch.

I serve authentic patty melts at my restaurant. A true patty melt is made on grilled rye bread with swiss cheese and grilled onions. People eat them up here! Anywhere else you go around here, they make them on grilled white bread or texas toast with american cheese, raw onions and pickles. :puke:

Oh... and all of my burgers are 6 ounce hand pattied burgers... I'll lock my doors before I'll sell a frozen hamburger out of there. I make my own chili, slaw, pinto beans, sausage gravy and macaroni & cheese too.

If you're ever down this way, stop in and try a real patty melt, ok?

Hummus is a creamy puree of chickpeas and tahini (sesame seed paste) seasoned with lemon juice and garlic, and is a popular spread and dip in Greece and throughout the Middle East. Hummus can be served as part of a meze platter; with bread or vegetable crudités for dipping; as a spread or filling for pita, lavash or Turkish pide bread; or as a tasty, creamy alternative to butter in sandwiches. A spoonful or two can also be added to Middle Eastern or Greek-style pilafs and stews to add richness.



2 cloves garlic—roughly chopped
¼ cup lemon juice
¼ cup water
14 oz (400g) canned chickpeas (garbanzo beans)—rinsed and drained
½ cup tahini
1 teaspoon sea salt


PLACE all ingredients in a food processor or blender and process until smooth, scraping the sides occasionally.
Variations: If you like a spicier hummus, add a small red chili (chopped) or a pinch of cayenne pepper, or try a little cumin for a more exotic variation.

Tip: Prepare extra quantities of hummus—it can be refrigerated, covered, for up to 1 week and frozen for up to 3 months.

Seven years into veg*ism, I can't tell one slab of dead animal from another. But I remember there's a sandwich with dead cow and sauer kraut. A terrible waste of good sauer kraut (not to mention a living creature).

Why can't restaurants serve veggie burgers? I sometimes think I'd like to try some of these things, but with fake meat. But no restaurant has it.

Except Ruby Tuesday. Their Veggie Burger rocks!

26. I was actually entertaining the thought of adding some vegan meals
to my menu. I'm just not sure how well they would go over.. but then again, the sales on the reubens surprised me too. This is mostly country cooking here, and the name of my restaurant is The Country Star. It's an old Huddle House building. I think I'll look a little deeper into the vegan meals though...

If you kept some bocas or gardenburgers in your freezer, they'd probably keep a long time. You'd be able to advertise them for veggies, but they probably wouldn't go bad like meat. So, they're there if people want 'em, no major loss if they don't.

I must admit, I am mystified as to how restaurateurs know how much food to have on hand. It amazes me.

31. It takes a little time to know how to order.. especially when you're
first opening. By 2 months, I knew what was selling good and could adjust my orders. Sometimes I ran out of things, and I hated that.. didn't want to tell a customer that I didn't have something that was on my menu.

I'll look into the Boca Burgers though... I do sell a lot of burgers.

What else would be good?

35. Well, I love a good tofu scramble, in place of scrambled eggs,
and made very similarly. And maybe keeping soy milk on hand.

I'll give some thought to what else. When my omni friends don't know what to serve, I tell them that any pasta with marinara sauce is always good. Some veg's complain that they get tired of pasta, but it's tasty, it's not so "wierd" that no one else will eat it, and everyone knows how to make it. So, I'm always grateful to find it, especially when there's nothing else available.

29. If you're in an area where there aren't many vegan meals to be had
people will come out of the woodwork, provided you get the word out.

There are a lot of online vegan dining listing and review sites, once you're on them anybody in the area or traveling will know to stop in. When I'm traveling where I can eat something good is one of the first things I check and often I plan the rest around it.

any suggestions on entree's? I'm totally clueless to the vegan lifestyle. I mean, I could live on lettuce, tomatoes, cucumbers, potatoes, squash, zuchinni, cabbage, green beans and peas... along with some peaches, pears and pineapples. What else is there? Pasta?

37. The biggest part of my menu is breakfast--- served any time...
Then burgers, sandwiches, steaks, shrimp, chicken tenders. chicken wings, boneless, skinless grilled chicken breast, beef liver & onions, and the soups & salads.

I'll check out that site, thanks. I know one of my food suppliers carries vegan meals.. I'm gonna look into it more.

39. Burgers are easy to veganize
and breakfast too, just add some tempeh bacon, tofu scramble, cook the hash browns in veggie oil, etc. Have some nice vegan bread or buiscuits and earth balance (a vegan margarine.) Vegan biscuits and gravy. Once you get the gravy down, you'll have people beating down your door.

It should be easy to veganize some soups, add a vegan salad dressing or three. The entrees, since it looks like it's traditional american fare, could include a lot of fresh veggies, but also stuff like chicken-fried tempeh, seitan cooked up most any way you can do chicken, a portobello burger or sliced up for fajitas, etc. There's a recipe on vegweb for lentil loaf and gravy that's pretty cheap to make and very very tasty. If you had small personal loaves pre-made or just did the whole thing occasionally as a special, it'd knock people's socks off.

Oh, and of course a veggie burger. Just make sure the bun you use is vegan.

A vegan personal pizza would also be a pretty easy thing to prep in advance and the ingredients are cheap.

I have recipes in my journal (back a few pages unfortunately) if you need any more ideas.

Definitely let me know if you need advice on veganizing anything.

Yum - if your're a meat eater.

If you're not, well, I suppose you could do it without the corned beef and it would still be pretty good. Rinse the sauerkraut first, though.
