2. I wouldn't.
Olive oil has both a lower smoking point and a stronger flavor. I would leave it - it's probably fine.

3. I'd say yes
but I'd also say that you can probably just use the vegetable oil you have and that would be enough. That is, if you really are pretty close.

A cup sounds like a lot of veggie oil!!!!

5. Well I only use olive oil so I know it will work
keep in mind the flavor is a bit strong but since you're using just a little you probably won't notice. Also, you can use pumpkin (canned)or applesauce in place of the oil

8. If it's premium virgin olive oil, don't do it.
If it's very light you could add a little without ruining your brownies. Otherwise I'd go with the applesauce suggestion.

9. Use melted butter or margerine. BUT NOT REAL HOT...
...or it cooks the eggs. SERIOUSLY. Works every time.

11. Olive oil has a very distinctive taste -
if you're just topping it off should be OK, but be warned it may slightly change the taste of your brownies - I've done it. :hi:

12. ok i just finished and i ended up using about 1 oz. of olive oil and the brownies are baking
at a fairly low temp 325f so hopefully they'll taste ok. I cut up some lindor milk chocolate truffles and put them in the mix as well.

13. Sounds yummy - I think they'll be fine.
When I substituted olive oil I used more than you and even though I could tell, no one else did. They gobbled them up without a clue. :hi:

14. I wouldn't ever use a recipe for brownies that required veggie oil.

That just sounds awful.

I would suggest this recipe, it's brilliant and literally *is* the perfect brownie.
