Fattening veggie comfort food tonight.
Veggie potpie with a regular pie crust on the bottom, cream of potato soup, Green Giant caulifower, broccoli, and carrots with cheese sauce, classic frozen mixed veggies, and a drop biscuit top.

Very fattening but yummy!!

1. Sounds very tasty!
Is it possible to make a pot pie that is yummy, but not fattening?

2. I'm sure it can be done but
I'm not familiar with the method. And it is really good!

3. Hmm, let's see.
I can think of ways to slim it down but not quite to the "not fattening level. First off, use a top crust only, and lattice it. Second, no cheese sauce -- instead use a thickened sauce of veggie stock and cornstarch or maybe agar agar, plenty of herbs and spices and a good variety of vegetables.

There was a Martha Rose Shulman recipe similar to the above but I can't put my hands on it at the moment.

Pot pies are great comfort food, fattening or not.

4. Yes, pot pies are a great comfort food.
And I know that even if a fat-free pot pie exists, it's probably not very comforting! But these tips are great; thank you! :hi:
