13. I dunno yet.
Waiting for my husband to come home to see what he's hungry for since I rarely eat dinner. I'm thinking it's going to be a nice shrimp scampi with angel hair and sauteed zucchini and yellow squash. That's what I'm offering anyway; we'll see what he has a taste for.

19. Did you say squash?
This is my favorite fall recipe. It's great hot or cold.
6 cups sliced Yellow Squash
1/4 cup chopped onions (we use 1/2 cup)
1 can cream of chicken Soup (Can be substituted with cream of mushroom for vegetarian versions)
1 cup sour cream (I don't know what the vegans would sub here, but I'm sure you'll come up with something. You're very creative. :evilgrin: )
1 cup shredded carrots
1 pkg (8 oz) herb seasoned stuffing mix
1/2 cup melted butter (OR whatever is healthier)

Cook Squash and onion in boiling water until squash is tender.
Drain, combing soup and sour cream.
Stir in Carrots.
Fold in Squash and onions.
Combine stuffing mix and butter. Spread half of stuffing mix on the bottom of 12x8 baking dish.
Spoon vegetable mix on top.
Sprinkle remaining stuffing mix over vegetables.
We grate cheddar cheese (Soy Cheese?) on top but you don't have to.
Bake in 350 degree oven for 30 minutes.

20. That sounds good but I don't know if he would
go for that. He likes his squash nekkid except for some seasoning and it's kinda heavy for a side for shrimp scampi. I will save it for later use tho. Thanx! :hi:

And like I said, it tastes very little like squash. I'm not a squash fan, but that stuff is AMAZING.
