Need good side dish recipes....
I just found out I'm hosting a xmas dinner for 4. A guest is bringing a big rib-roast, and I said I'd make the rest. I'll definitely do mashed potatoes and candied sweet potatoes. But I need a couple more. I need ideas and recipes...

I'm not much of a cook, but I can follow simple instructions ;)

1. corn casserole. this is easy and good.
corn casserole with chiles

1 package (8 oz) cream cheese
1/4 cup milk
2 tablespoon margarine
2 cans corn, drained
1 can (4 oz) chopped green chiles
1/2 teaspoon crushed red pepper
1/4 teaspoon garlic salt

350. Spray a 2 qt baking dish with non stick spray

combine cream cheese, milk and marg in microwave safe bowl. Microwave
on high for 1 minute. Stir until smooth.

in prepared pan combine corn, chiles, pepper and garlic salt. Add cream cheese
mixture and stir to combine.

bake uncovered 25 to 30 minutes

2. Brussels Sprouts
Steam them until they are half-way cooked.

Then saute them in a mixture of half butter and half olive oil, and add some capers and their juice, as well as some salt and white pepper to taste. Even my husband (who HATES Brussels sprouts) loves them.

5. Instead of same old mashed potatoes try this...
Twice baked potatoes! They are great and easy!

4 large baking potatoes
8 slices bacon
1 cup sour cream
1/2 cup milk
4 tablespoons butter
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup shredded Cheddar cheese, divided
8 green onions, sliced, divided


1 Preheat oven to 350 degrees F (175 degrees C).

2 Bake potatoes in preheated oven for 1 hour.

3 Meanwhile, place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.

4 When potatoes are done allow them to cool for 10 minutes. Slice potatoes in half lengthwise and scoop the flesh into a large bowl; save skins. To the potato flesh add sour cream, milk, butter, salt, pepper, 1/2 cup cheese and 1/2 the green onions. Mix with a hand mixer until well blended and creamy. Spoon the mixture into the potato skins. Top each with remaining cheese, green onions and bacon.

5 Bake for another 15 minutes

7. cranberry orange relish
Put a bag of cranberries and a whole seedless orange (with skin) into a food processor. Process. Add sugar to taste, possibly some Cointreau.

mmm-mmm!

8. Tomato and onion bake.
four large size tomatos
3 medium sized onions
butter
bread crumbs

Simply cut the tomatos in circles. Cut the onions to make circles.

In an oven proof dish layer tomato, onion, tomato, onion. etc until all are gone.

Then cover the top in breadcrumbs.

When you are ready to place it in a moderately warmed oven, place four dollaps of butter on the top.

Bake for an hour, and serve (must be served hot)

9. How about 1960's style green beans w / cream of mushroom soup
baked in the oven with Durkee french fried canned onions on top ? It is an oldie but a goodie.

10. Got a grill? Roast some veggies

Grill some veggies:

Asparagus
Sweet potato, sliced round pieces not too thick
Red bell pepper
Green bell pepper
mushrooms
large sweet onion
zucchini
yellow squash

Cut them up and marinate in balsamic vinegar and olive oil for at least an hour

while they are marinating, light the grill, make it hot...coals in the center

then place on the grill, ..do the sweet potatos first and keep an eye on them as they burn the easiest...move them towards the outside away from the heat after they start turning darker turn about every ten minutes...all the veggies should be done within 30 minutes..gotta poke the sweet potatos with a fork to make sure they are soft.

Once on the platter, shred a bit of fresh basil and drizzle a little fresh oilve oil and balsamic vinegar on them and season with salt and pepper.

Veggies are good..roasted are tasty and it is a colorful plate too!

11. my family loves this zucchini cassserole
1. put 1 tablespoon butter in a skillet, add 1 large onion sliced and 1/2 green or red bell pepper diced, cook until soft

2. slice up a dozen zucchini and boil in salted water for two minutes and drain

3. in a casserole mix 1 cup mayo, 2 eggs, 1 cup grated parmesan cheese

4. add the vegetables and stir

5. top with some kind of cracker crumbs and bake at 350 for 1/2 hour or until set in the middle

12. oooh, curried spinach..
..would be good with your menu. Just mix frozen spinach with some curry powder, grated nutmeg, butter, and a bit of heavy cream and sautee until hot. Season with salt & pepper.
