1. Tofu is tasteless, so it works really well with sauces.
You can use it as a replacement for racotta cheese in any receipe - including lasgna. I've had it before and can't tell the difference. There is firm and soft tofu. Soft can be used to replace eggs in scrambled receipes. Saute veggies or whatever and add the tofu. Mash and stir and eat. You can tell the difference, but it tastes good.
