Baking is too exact. I like tossing ingredients in on a whim. :-)

3. Cranberry Lemon Cookies..
1 c. flour
1 t. baking powder
1/2 t. cinnamon
1/2 c. butter
1/2 c. sugar
1/3 c. brown sugar
1/2 t. lemon zest
1 egg
1 1/2 c. pecans
1 1/2 c. chopped fresh cranberries

Cream butter, sugars, and lemon peel.
Beat in egg and vanilla. Gradually
beat in flour, baking powder, and cinnamon.
Stir in pecans and cranberries. Drop by
teaspoonfuls 2 inches apart on greased
baking sheets. Bake 10 to 12 minutes at
350, until golden. Let cool slightly
before removing to cooling racks. Frost
when cool.

Icing:
whisk together 1 c. confectioner's sugar,
2 T. milk, and 1/4 t. lemon zest.

I was beginning to think that everyone has me on 'ignore'. It takes a long time for a 'newbie' to get up to par on a message board, doesn't it?

I'm going to try the cookies this weekend. I am bored with my 'usual' Christmas cookie recipes and the lemon cranberry ones sound really yummy.

Sometimes it takes a while for people to respond,but I'm sure nobody has you on ignore:)

6. Well, first I go
to the frozen food section of the store, buy cookie dough roll, get home, cut in 4ths, place on cookie sheet, bake according to directions, and voila!! Fresh cookies! :9

Not very creative in the kitchen.

7. Best Chocolate Chip Cookies ever
Cream together:
1 cup Crisco
½ cup brown sugar packed
1 cup granulated sugar

Add:
2 medium eggs
2 tsp vanilla

Stir in:
2 ¼ cups unbleached white flour
1 tsp baking powder
1 tsp salt

Add:
1 12 oz package Hershey’s chocolate chips
1 cup chopped walnuts if desired

Bake at 350 degrees for 11-13 minutes with rack in TOP Position of oven


The secrets to this recipe are to use the specified brand names. The Crisco is regular Crisco, NOT butter flavored, NOT a bargain brand. The vanilla is real vanilla, not imitation. Baker's semi-sweet chips are the best, but no longer appear on my grocery shelf and I don't know why. I use Hershey's.

Several years ago I discovered by accident that medium eggs and baking with the rack in the top position are the final keys to cookies that are crunchy and chewy at the same time, especially when they first come out of the oven. The original recip is from a cookbook from the 1930's, which I think is what accounts for the slightly unusual proportions, and why the medium eggs work so well. Eggs were smaller 70 years ago. The original recipe actually calls for chopping up a bar of semi-sweet chocolate, which is a clue as to how old this actually is.

8. I've posted this before......
....but these cookies are so good they deserve to be posted twice. Hope you make them and enjoy them as much as I do. They are easily one of my favorites:

Chocolate Crackle Cookies

1 3/4 c all purpose flour
1 tsp baking powder
1/4 tsp salt
1/2 stick butter
1 c sugar
2 eggs
2 oz's unsweetened chocolate (melted and cooled)
1/2 c chopped semi-sweet chocolate or chocolate morsels
1/2 c powdered sugar

Combine flour, baking powder and salt. Set aside.
In a large mixer bowl, beat butter and sugar until blended. Beat in eggs. Add melted chocolate and continue beating till mixture is smooth. Gradually beat in flour mixture. Stir in chopped chocolate.
Cover and chill for 1 hour or until easy to handle.
Preheat oven to 350 degrees. Shape dough into 1 inch balls. Roll balls in powdered sugar to coat generously. Place balls 1 inch apart on ungreased cookie sheet.
Bake 10 - 12 minutes or until edges are set and tops are crackled. Cool on a wire rack.

9. these are good when in a hurry
Buy the refrigerated Pillsbury sugar cookie dough. Divide up the dough as directed. Shape each cookie into a thick little pancake and top with an unwrapped Hershey Kiss. Any of the Kisses work well. Bake as directed...This is a twenty-five minute, two dozen recipe and the kids love to help with these! Plus, no mess!
And congratuations our your 400th post. God willing I'll be there in another 10 months. :)

11. Soft Rolled Sugar Cookies
This is the absolute best sugar cookie recipe I've found, and I've been around awhile. Had to actually type it up for my co-workers today, so here it is! Had to add the notes so they can make them exactly the same.


SOFT ROLLED SUGAR COOKIES

2 C. Sugar
1 C. butter flavored Crisco shortening
½ cup butter (no margarine)
3 eggs
5 ½ c. flour – more or less
4 tsp. Baking powder
1 tsp. Baking soda
1 tsp. Salt
1 tsp. Vanilla
1 tsp. Lemon extract
1 C. sour milk (I put about a tablespoon of lemon juice in measuring cup then add milk to make one cup. This will make sour milk, plus adds a little more flavor.)

Mix together sugar, shortening, butter and eggs in a large bowl. Mix dry ingredients separately in another large bowl. Mix together vanilla, lemon extract and milk.
Add milk mixture alternately with flour mixture to butter mixture. Chill several hours or overnight.
Roll out and cut into shapes. Bake at 350 degrees for 10 – 15 minutes on lightly greased cookie sheet.

NOTES: I use Air Bake cookie sheets and bake 10 or 11 minutes, depending on the size and thickness of the cookies. Don’t over bake, if they get too brown you get crunchy cookies. If you want to increase butter and decrease shortening you can, as long as it all equals 1 ½ cups. I always use a pastry sheet and rolling pin cover (available at kitchen supply stores) when rolling out the cookies, I seem to have less trouble with them sticking to the surface.

that's for sure. I once made a batch of chocolate chip cookies and forgot the flour. They looked a bit odd while I was mixing the batter, but I didn't figure out my mistake until I looked in the oven and saw the lake of sweet buttery chocolate on the cookie sheet.

16. Flour, cream cheese, and butter cookies made by my Mom
These are a very old family Christmas tradition. They are stuffed with apricot paste or almond paste and dusted with powdered sugar. If you want the recipe, email my Mom at:
