Pinto Beans, simmered in ham hocks
When they are about 3/4 done, I'm gonna add Chorizio.

Serve over white rice. YUM!!!!!

39 degrees here, and raining.

Great comfort food on an uncomfortable day.

7. That's a favorite dish here in WV.
But minus the chorizo. I like red beans, black beans, and my favorite are speckled butter beans. Anyway, beans, rice, and cornbread is a great meal.

10. I like all types
of butter beans. But the speckled butter beans you can get down south are the best to me, especially homegrown. It does take a lot of shucking to get a pot of them though.

13. I'm actually cooking a BIG pot of chicken soup right now.
Lima beans, corn, onions, carrots, celery. Um, um, good. We're supposed to get snow tonight. Gonna make a fire shortly.

But everything else fresh. It's still damn good.

20. cut up chicken and boil
both white and dark meat.

Let it cool, skim fat.

Boil second time.

Let it cool, skim fat. At this point also remove bones, and shred/chop chicken.

In stock and shredded chicken, add carrots, celery, buillon, salt, pepper, chopped onion, bay leaf.

Keep stirring at a simmer.

Take out bay leaves and add noodles (after about 45 mins.)

Simmer another 20 mins or so.

Good eating!!!!!!

21. Ah, that sounds good.
I've been adding crushed tomatoes and Tabasco to mine, lately. Though I sometimes go with the broth base. Also use potatoes.

I use 4 skinless boneless chicken breasts, and 4 skinless thighs, with bone. I leave the bones in the soup. I love working on those bones at the end.
