I just completed a most exquisite potato salad

now it will rest in the fridge overnight so that the flavors can marry (though I understand that the definition of marriage has nothing to do with bacon and green onions....)

adored in my state. The state of its 8:20 am. and I love potato salad! Now I have to call mom and get her started on some! Why did you get those flavors dancing through my brain. Why? Whyyyyyy?
Oh the horror, the horror! It will take hours. And you know that store bought stuff just wont do. I hope you enjoy yours. I really do as I sit here with my life cereal!:cry:

Yellowdog's Potato Salad:

Thinly slice red potatoes in the quantity you wish. (You can also use those thin skined Yukon Gold potatoes but I like the red ones best)

Steam them until just tender. Yes, in a steamer, saves oodles of time and labor and tastes DIVINE!!!

While they are steaming:

cut up the following in your preferred manner of chopping/dicing/etc

green onions
green/and or red bell pepper
hard boiled eggs
celery
green olives
bacon if you want it

Combine everything and chill. Add the dressing of choice after everything has cooled down. I often do the potatoes, stick them in the frige for chilling then combine everything.



I usually just dress mine with mayo but there are all sorts of wonderful concoctions including mayo mustard combos, vinegarettes, even ranch dressing.

On Edit: there are as many versions of potato salad as there are cooks, I do believe. Also true of deviled eggs, another pot luck staple.
