Spinach couscous: now what?

A friend brought over a big box of spinach couscous (just left a sorta-gourmet basket on the steps as a thank-you & the couscous was in it) and I'd like some suggestions for what to prepare with it -- what kind of good main dish could I make with it?

Any thoughts?

1. sounds good!

I'd make grilled fish with that, orange roughy or white roughy perhaps?
Grilled chicken might go good too.

2. hmm.. that sounds good..

found a recipe for couscous with onion, mushroom and feta, perhaps having a nice fish (or chicken but we have so much chicken) to go with it would be nice.
