egg beaters
bacon
Parmesan
provolone
soy sauce


I burned the bacon, and it is not even well done:shrug:

2. Gas or electric?
With gas, better success with a heavier pan, I think. But my current stove is electric. Lid needed for the pan in either case.

If you really want an omelet, rather than scrambled eggs, don't use more than one of two eggs. Everything ready in advance: eggs beaten, fixins ready to dump in.


Takes a bit of experimenting to find the right setting (on my stove, it's just below "medium" -- but that's meaningless for comparative purposes); I don't touch that dial during the process. Much of the cookin is done by the original heat of the pan, a bit later by the fact the burner isn't turned off.

Burner on, olive oil in pan, lid on pan, get the pan hot enough that the lid is uncomfortable to the touch. Reasonably rapidly: lid off, dump eggs in. Pause. Fixins atop eggs. Lid back on briefly. Lid off, fold omelet over with pancake turner. Lid back on briefly. Burner off.

If you decide early the omelet is botched, scramble instead: constant motion of the material with pancake turner, try to avoid formation of large chunks.

In either case, stop before you get to the rubbery stage.

When I saw your reply, I first noticed your avatar. I use the name "otherone" on a local discussion board. When I saw your du name, I knew what you had posted as a reply. I read your reply... and felt like I had already read it somewhere before.

Since I doubt that you cut & pasted your response from a previous post, i called this phenomenon deja vue.

Three eggs

Grated Pechorino Romano

Olive Oil



Separate yolks from whites

Beat yokes with wooden spoon until smooth

Whip whites with whisk or egg beater until you
end with a fluffy meringue.

Pour the yokes in a pan with olive oil on a low
to medium heat. When the yokes have are cooked
until firm pour the meringue on top and fold
the omelet over.

Put Romano on top and cover for three to five minutes

I you do it right the omelet will be incredibly light
and about four inches thick.
