And a couple of pork tenderloins.

4. Doing the turkey for friends.
They're having a Christmas party Friday and asked me to do one for them.
The tenderloins are for me.
Actually, I guess the turkey is too. I'll get some Friday night.

If I could get the cooker hot enough it takes 4-5 hours. A little chilly today (47) so I'll smoke it for 2 or 3 hours and finish it off in the oven.

10. Yep. It's a Cajun water cooker.
Charcoal and pecan wood chunks in the bottom pan, water and some herbs in the top pan. Turkey on the grill on top.



Looks kinda like R2D2 from Star Wars.
Instead of water, I used the liquid I brined the turkey in.
Very moist and juicy.

3. I smoked two turkey's over Thanksgiving.
Plum is my favorite wood for Poultry.

Guess what's for lunch today. "Smoked turkey".

5. Never had access to plum.
Lots of pecan groves down here, so that's what I use.
A little lighter and sweeter flavor than hickory.
