I read Yollam's post about no ovens in Japan, and it made me think of the world's easiest and most foolproof way to make salmon. Modified it from The Joy of Cooking.
- Buy a can of Potlatch seasoning from Williams-Sonoma - Defrost salmon filet(s) the night before, if frozen (we get the bag of frozen filets from Costco)
1. Set oven to 475. 2. Put 1 tbs butter and 1 tbs olive oil (per filet) on a baking sheet (or any ovenproof dish with sides), put in oven. 3. Rub 1/4 tsp of seasoning on each side of filet. 4. When you hear butter sizzling, remove pan from oven and add filet. 5. Bake 5 min per side. (time it carefully)
Voila! Perfect restaurant-quality salmon. The potlatch seasoning really makes it.
Until I found this recipe, I would always grill salmon, which invariably left it overdone on the outside, or underdone in the middle. This recipe, however, works every time.
