Champagne cocktail recipes, anyone?

I am anticipating my celebration when the inevitable indictment of Porky goes down... straight-up champagne gets me drunk too fast.

Does anyone have any good champagne cocktail recipes? Hmmmm?

1. Put a sugar cube in a champagne flute, then
douse it with Angostura bitters, then fill the glass with champagne.

8. Well, I just went out and bought a bottle of Gloria Ferrer and
Angostura, so you better be right. Heh, heh, heh.

Thankfully, Ferrer is very good sparkling wine.

9. Ooooo - here's a recipe for Absolute Disaster

Take one Bottle of Andre Cold DUck and one bottle of Absolut

+ =

Open up the Cold DUck and drink about 2 big swigs out of it
Fill up Cold Duck to the top with Absolut Vodka
Drink like there is no tomorrow
Spend wee hours in the morning hugging the porcelin gods
Suffer for 2 days later from most massive hangover

Yes folks - I have done that. I decided to drink Champagne for my 20th birthday but the Champagne (which was Cold Duck) wasn't getting me drunk enough so I added Absolut to the bottle

I'm so glad I grew out of that get fricking drunk at all cost phase!!

10. French 75s

Named after a light cannon that was incredibly precise in WWI.

For one glass, use .5 to 1 jigger Cognac,
a good squeeze of fresh lemon juice
a bit of sugar (or a dash of simple syrup) and
about 5 ounces Champagne.

Muddle in a tall glass over ice. Serve with a garnish of lemon slices, strawberry slices or mint sprigs.

For a punch bowl version, combine:

3 cups cognac,
the juice of 3 large lemons and a thinly sliced lemon,
a cup and a half simple syrup (or more, or less, to taste)
and 2-3 bottles of champagne, poured carefully down the side.

add 2 pounds of ice or a decorative ice ring

Float strawberry slices on top.

For future reference, you can use cheap champagne (like a California entry level) or cheap Cognac, but never use cheap both.

But you can also put in Cassis.

Black Velvet - 5 oz. champagne, 5 oz. Guiness Stout. I have not tried one of these, so can't offer any ideas on how it tastes, but I've long wanted to try one.

I find that for French 75s and Bellinis that Prosecco is actually better than Champagne. Or use some other sweeter sparkling wine, like Freixenet, another of my cheap sparkling wine faces.

And I know you wanted cocktails, but I offer the Bellini anyway, which is actually a mixed drink.

Personally, I would't use Champagne (and by that, I mean actually Champagne, not just sparkling wine) for a mixed drink or cocktail.
