First harvest from my garden
I picked my first 3 yellow squash and just finished frying them up.

Yum. :9 :9 :9

I wish my tomatos would hurry up.

My summer stuff is late this year but the fava beans are ready!

2. Would you like a recipe for Squash Casserole?
It's really fresh, and I really like eating it cold, so it's really a good meal on a hot summer day.

4. Squash Casserole
6 cups sliced Yellow Squash
1/4 cup chopped onions (we use 1/2 cup)
1 can cream of chicken Soup (Can be substituted with cream of mushroom for vegetarian versions)
1 cup sour cream
1 cup shredded carrots
1 pkg (8 oz) herb seasoned stuffing mix
1/2 cup melted butter

Cook Squash and onion in boiling water until squash is tender.
Drain, combing soup and sour cream.
Stir in Carrots.
Fold in Squash and onions.
Combine stuffing mix and butter. Spread half of stuffing mix on the bottom of 12x8 baking dish.
Spoon vegetable mix on top.
Sprinkle remaining stuffing mix over vegetables.
I grate cheddar cheese on top but you don't have to.
Bake in 350 degree oven for 30 minutes.

Good served hot or cold. I enjoy it as leftovers cold. It's a yummy treat. This is not a vegan recipe, but if you have found good vegan replacements for sour cream and cheddar cheese, you can make it your own. Hope you enjoy it. Please let me know if you make it and how you like it. :)
