1. The flavors get to meld a little more
I find lots of things are better the second time around.

Spicy things, however, tend to get really spicy after a day or so. :o

4. It's really easy:
2 pounds bison meat (~$4 a pound)
1 large vidalia onion
1/2 bulb of garlic
4 fresh tomatoes
2 cans of diced tomatoes (go for the no salt added variety)
1 can of tomato paste
4 dried Thai Dragon peppers
2 cans of kidney beans
2 Tbsp cumin
2 Tbsp hot Hungarian paprika
2 Tbsp chili powder
Salt to taste
2 Tbsp honey

It's very easy to make. It's just a weenie in hot water.

(Thanks to Stephanie Miller for that one!)

9. Lets the flavors blend. A REAL New Englander will never eat chowda
the same day it's made.

14. Same rule applies for rogan josh and various other gravy based dishes
Always best tasting if you make them the day before and serve them after they've been allowed to sit over night.
