I'm headed to the store. What should I make for dinner tonight?

I was thinking fish tacos, but they don't make for the greatest leftovers.

I live alone, so want to make something that I can eat for the next few days as leftovers.

Thoughts? Suggestions? I want to stay on the healthy side.

2. I eat Mex a great deal of the time. Can't get enough.

Really could eat it for every meal.

Any healthy, low-fat Mex recipes?

I made bean burritos last week, so looking for something different.

3. I'm off to Costco. Just going to see what hits me when I get there.

4. A Sandwich.

A cheese sandwich with hummus and/or mayo, roasted peppers, lettuce, tomato and alfalfa sprouts on pumpernickel.

Soup make a big batch of minestrone if it needs to last. I don't cook, my husband does, so I don't know all the ingredients. Chili, a quiche....
