Poll question: Chili with beans or without?
Inquiring minds want to know which you prefer. As for me, beans go in beans, chili goes in chili. 'Nuff said.

125. black beans make great chioi! I also add them near the end
and I rinse them too.

My latest chili incarnation is ground buffalo meat, tons of cumin, chili powder, garlic and a red onion, fresh minced jalapeno, serrano and poblano peppers, some diced tomatoes, salt and sometimes a little red wine.

When I add the beans I add a good handful of fresh snipped cilantro

135. I made a big mistake in my last batch. Note to self: Read Can Label.
Tomato sauce instead of chopped Tomatoes. Now I have to have something to water it down.

I like to throw dark green things into Chili. Yes I drain all beans. Didn't use black beans the last time. I could not find them in the store.

111. I'm just a nobody.
The story I was always told was that Texanos (Texans of Mexican descent) were trying to duplicate molé using ingredients that could be found in Texas.

The only other theory of chili's origin involves an attempt to duplicate pemmican, which would mean the ultimate inventors of chili would be people who lived nowhere near Texas and have nothing to do with Texas heritage/history/culture.

Most historians agree that the earliest written description of chili came from J. C. Clopper, who lived near Houston. He wrote of visiting San Antonio in 1828: "When they have to pay for their meat in the market, a very little is made to suffice for the family; it is generally cut into a kind of hash with nearly as many peppers as there are pieces of meat--this is all stewed together."

Except for this one quote, which does not mention the dish by name, historians of heat can find no documented evidence of chili in Texas before 1880. Around that time in San Antonio, a municipal market-El Mercado-was operating in Military Plaza. Historian Charles Ramsdell noted that "the first rickety chili stands" were set up in this marketplace, with the bowls of red sold by women who were called `chili queens.'

…as the Chili Queens were Texanos ("Tejanas"?). Furthermore, the single documented reference does not identify if the chili originated with Texanos or Texas gringos, so it doesn't back up your argument at all.

Hell, even in Hawaii they use beans in their "chili".

Chili is tomatoes and red beans and peppers, and then, if one wants, other things can be added, like meat or cheese or, ick, macaroni.

A good chili should consist of cubed up meat, onions, garlic, a can or two of tomatoes (optional), some spices (chipotle, oregano, cumin, ancho chile powder, etc.) and a bottle of good amber ale. If one wants the chili to be slightly thinner, they can add some beef stock.

I've never had chili with broccoli in it. I have had various chilis with:
- peppers (jalapeno, serrano, habanero, bell, anaheim...)
- greens (turnip, collard, mustard, spinach...)
- winter squash (pumpkin, delicata, butternut...)
- summer squash (zucchini, yellow, crookneck...)
- potatoes, sweet potatoes
- tomatoes
- onions
- black beans, white beans, kidney beans, pinto beans, black-eyed peas...

I've had chili served with:
- bread (cornbread, rustic bread, sandwich bread...)
- rice (different varieties of white and brown)
- pasta
- crackers

I've had chilis that were flavored with beer, tequila, coffee, chocolate...

I've had chilis topped with cheese, avocado, sour cream, Greek yogurt, onion, and even toasted pumpkin seeds.


The world of food isn't divided into meat and broccoli. :eyes:

Here's my MOST favorite chili recipe. It's the best. Notice the merlot? Just serve the remainder with the meal.

All-American Chili
From Cooking Light

6 ounces hot turkey Italian sausage
2 cups chopped onion
1 cup chopped green bell pepper
8 garlic cloves, minced
1 pound ground sirloin
1 jalapeño pepper, chopped
2 tablespoons chili powder
2 tablespoons brown sugar
1 tablespoon ground cumin
3 tablespoons tomato paste
1 teaspoon dried oregano
1/2 teaspoon freshly ground black pepper
1/4 teaspoon salt
2 bay leaves
1 1/4 cups Merlot or other fruity red wine
2 (28-ounce) cans whole tomatoes, undrained and coarsely chopped
2 (15-ounce) cans kidney beans, drained
1/2 cup (2 ounces) shredded reduced-fat sharp cheddar cheese

Heat a large Dutch oven over medium-high heat. Remove casings from sausage. Add sausage, onion, and the next 4 ingredients (onion through jalapeño) to pan; cook 8 minutes or until sausage and beef are browned, stirring to crumble.

Add chili powder and the next 7 ingredients (chili powder through bay leaves), and cook for 1 minute, stirring constantly. Stir in wine, tomatoes, and kidney beans; bring to a boil. Cover, reduce heat, and simmer 1 hour, stirring occasionally.

Uncover and cook for 30 minutes, stirring occasionally. Discard the bay leaves. Sprinkle each serving with cheddar cheese.

Note: Like most chilis, this version tastes even better the next day.


Yield: 8 servings (serving size: 1 1/4 cups chili and 1 tablespoon cheese)

127. I like beans in the chili, it is a personal taste. It is also a very
economical way to stretch a small amount of ground meat to feed many people.

The genuine Bowl of Red was highly spiced meat with chilis, and other seasonings cooked to produce a soup/stew/gravy like consistency. The beans were served on the side, by the old chuck wagon cooks. Or so it says in my favorite source of chili recipes "Chili Madness"



Interesting no discussion of Cincinnati Chili yet.

I like mine 5 way.

"Home made" chili-style dishes can include beans. You know, ground beef, canned tomatoes, onions, chili powder & canned beans. This is not "serious" chili--but a good quick dish for a cold day.

Or you can cook the beans separately & let the diners do the mixing. (Also offer garnishes like chopped green onions & grated cheddar.) Or pour the chili over rice or pasta. Skinner makes Lone Star Pasta--in the shape of Texas! On the package, you'll find their recipe for Texas Rattlesnake Chili:

Then, there's "serious" chili. I met a few real chili-heads in the old days--Terlingua pioneers. Ingredients ranged from secret super-chile mixes through exotic meats. Not to forget the tequila--in the chili or in the cooks. In those circles, beans were forbidden.

When I feel serious, Wick Fowler's 2-Alarm Chili Kit will do the trick. And I'll use cubed or "chili-ground" meat rather than "hamburger-ground."

Like in Texas, they don't add too many beans. In California, Texas Chili is called Chili Con Carne as opposed to chili, which just has beans.

Actually I make both kinds. We make a beanless thicker variety for 4 way (chili over spaghetti with cheese and onions).

But when it's just a bowl of red then I put lots of beans in it. Black beans, kidney beans, pinto beans and sometimes some great northerns.

148. Hey, Bike Writer, it's apparent from the responses to this thread that
many DUers, as wonderful as they are, don't know about chili con carne. H. Allen Smith, a famous Yankee writer, once got into a big feud with Frank X. Tolbert, a real chili man, about beans vs. no-beans. Any real Texan knows that meat and spices are what goes into chili, and all this stuff about "vegetarian" and "poured over spaghetti" are fine ideas for mealtime, but certainly outside the realm of a "Bowl of Red."

Some people also think "barbecue" is a verb. God bless 'em anyway.

154. Yep, you're right. I recall reading about it. Here's Tolbert's recipe:
Frank X. Tolbert's Original Bowl of Red
12 dried ancho chiles
3 lbs lean beef chuck, cut in thumbsize pieces
2 ounces beef suet
1 tablespoon ground cumin
1 tablespoon dried oregano
1 tablespoon cayenne
1 tablespoon Tabasco sauce
2 cloves garlic, chopped (or more)
1 tablespoon salt
2 tablespoons masa harina (optional)

4-6 servings Change size or US/metric
Change to: servings US Metric

2 hours 40 minutes 40 mins prep

Break off the stems of the chiles, and remove the seeds.
Place chiles in a small saucepan and cover them with water.
Simmer for 30 minutes.
Purée the chiles in a blender with a tiny bit of cooking liquid to make a smooth, thin paste.
Use as little liquid as possible, unless you want the chili to be soupy.
Pour the chile purée into a Dutch oven or large, heavy pan.
In a heavy skillet, sear the meat in two batches with the beef suet until the meat is gray.
Transfer each batch to the chile purée, then pour in enough of the chile cooking liquid to cover the meat by about 2 inches.
Bring the chili to a boil; reduce heat to a simmer.
Cook for 30 minutes.
Remove the chili from the heat, and stir in the rest of the ingredients.
Return chili to the heat, cover and resume simmering for 45 minutes, keeping the lid on except to stir just occasionally.
(Too much stirring tears up the meat) Add more chile liquid only if you think the mixture will burn otherwise.
After 45 minutes, you may add the masa harina, if you wish.
The masa adds a subtle, tamale-like taste, but it also thickens the chili.
Cover the chili again and simmer for another 30 minutes.
Do a lot of tasting to see if seasoning suits you.
Add more seasonings as you like, but go easy on the oregano to avoid ending up with a spaghetti sauce flavor.
Take the chili off the heat, and refrigerator overnight.
Skim as much fat as you wish from the chili before reheating it.
Serve hot.

171. You got that right, Pard. I made a batch at work before I retired...
that was delicious! There were two brothers named Cantu on our crew, both of them grads of a culinary school in Houston. They worked at their Brother's Mexican restaurant on the side. They kept telling me the chili was too hot, as they ate bowl after bowl!

The best Chili I've had consisted of diced beef and pork, slowly stewed with a variety of hot and mild Peppers with cumin, fatback and onion. This was served with a side of beans and rice as well as corn tortillas.


Beans, Vegetarian Chili, Pasta, Cheese etc. are all variations on the above "Mother" recipe, in much the same way you make mac and cheese base from a béchamel or any number of sauces from a hollandaise

173. The cooks knew what they were doing with beans on the side...
Green chile can be made much the same, with the addition of Green chiles and sometimes with tomatillos. I prefer flour tortillas with either red or green chile.

175. Lady Bird Johnson's Pedernales River Chili
4 pounds coarsely ground beef

1 large onion, chopped

2 cloves garlic, chopped

1 teaspoon oregano

1 teaspoon ground cumin

6 teaspoons New Mexican red chile powder (or more for heat)

2 16-ounce cans tomatoes

2 cups hot water

Salt to taste

Combine the beef, onion, and garlic in a skillet and sear until the meat is lightly browned.

Transfer this mixture to a large pot, add the remaining ingredients, and bring to a boil. Reduce the heat and simmer for an hour.

When done, transfer the chili to a bowl and place it in the refrigerator. When the fat has congealed on top, remove it with a spoon.

Reheat the chili and serve it as LBJ liked it--without beans and accompanied with a glass of milk and saltine crackers.

Yield: 12 servings

Heat Scale: Medium

177. Never ground beef and never tomatoes.
CUBED meat, about 1/4-1/2 inch.
And tomatoe sauce or paste.
I don't want to SEE pieces of tomatoe.
Just want the flavor.

179. My favorite way...
... is to use about half coarsely ground and half cubed. Ends up with a nice texture.

I used to be a purist and manually chop up 4 lbs of lean meat into cubes. I have since found that lean meat does not make the best chili, need a bit of fat in there :)
