35. It's in her first book. Well worth the effort to make.
Don't take shortcuts; for example, you may think that sauteeing the garlic in butter for twenty minutes is a bit overboard, but do it her way. You'll have people who say they don't like potatoes BEGGING for more.

I, for example, loathe butter, but Mrs R persuaded me to stick with the recipe and not substitute. And I'm glad I did.

(It's on page 520 of the original edition of Mastering the Art of French Cooking.)

55. You can probably find it in your library as well, but it's worth buying.
If you're into food and cooking, it's a "must have." I guarantee you'll love this book.

By the way, the authorship of the original volume was listed as:

Simone Beck,
Louisette Berthold,
Julia Child.

So if someone has a used original edition, it may be listed with Beck as the author.

I liked that guy with the grey hair who did Joe Cocker last week. I think we'll see him in the top 12. I don't like him in the Bo sort of way, but I think he was talented.

Don't laugh, but, since the New Year, my son and I have been trying to cut back on the unhealthy crap we eat--I bought some tofu hot dogs, but MMjr just coudn't eat them.

Can you suggest a good tofu anything that we can try before we convince ourselves that tofu isn't for us? I'm not being smart or joking...I really want to try something we'll like.

36. Tofu hot dogs, much like regular hot dogs...
not the benchmark standard.

For good tofu, you'll want to try a good Thai restaurant. To make it for yourselves, visit us down in the tofu ghetto here at DU in the Vegetarian, Vegan forum. You're bound to get a GREAT response.

50. There's a trick to tofu

You have to press all the water out of it to get a more paletable texture. Put some clean kitchen towels on a plate, place the drained tofu (firm or extra firm for entrees) on the towels, then layer on another towel or two and a second plate to press the water out. If it goes really slow a can on top of the second plate helps to add a little weight and speed up the process, but too much weight can make the tofu crumbly. Edit: Freezing it for a day or so and then thawing it can help, too, but it gets a bit crumblier and I persoanlly find that unspeakably annoying. /end edit

After that I like to slice it up thin and fry it in just a little big of oil (for a vegan I am not exactly the world's healthiest eater) until it browns a bit, then layer it in a pyrex baking dish, cover it in bbq sauce, bake it until the sauce thickens and the sugars start to carmelize, then serve it with grilled asparagus and garlic mashed potatoes.

Tofu works pretty good in baked goods, too. Usually one uses either the aeseptic silken tofu that doesn't need refrigerated or a soft or medium regular tofu on desserts. I have really easy recipie for a pumpkin pie made with tofu (I think the title is LMommy's Pumpkin Pie for lazy vegans or something like that) in the Veg group that comes out really well and only uses four ingredients.

I also like the pre-marinated tofu. It comes in a lot of flavors, but the teriyaki and hickory are really good. The nice thing is that it's pre-pressed and marinated so all you have to do is cut it up, heat it if you want (some flavors make a decent sandwich) and eat it. I like to mix it up with frozen stir fry veggies and serve over rice for a really easy meal with almost no work.

You know, when I see tofu in the market, I just never think of it as a meat substitute. I see it and I just think "white blob."

Thanks for all of your excellent advice. I've got a package of stir-fry vegetables in the freezer...a huge bag of them. I think I may pick up some tofu this week and drop by the vegan group to see if some of y'all can give me advice on a tofu stir-fry.

but you don't have to dip crawfish in butter to make them delish...and it would be rather embarrassing to suck a lobster head at a fine restaurant, wouldn't it?

Speaking of crawfish, I paid $3.50/lb for them last week...almost could have bought lobster for that! But they were goooood. :D

67. Another time we had some box turtles and the kid up the street told us
they laid eggs in sand. So we took the turtles down to our basement and filled the drain in the floor up with sand so they would lay eggs and make more turtles.

I think it took the plumber a couple days to get all that sand out of the drain.

I don't know what kept my dad from killing us.

We were rather adventerous. LOL

One of my friends' uncle had a turtle farm, he called it...just some crossties with leaf compost scattered inside. Everytime he'd see a turtle in the road, he'd pick it up and bring it home to his turtle farm. Those little dickens DID start to reproduce, and he had turtles EVERYWHERE. I haven't stopped by to see him in a long time.

He's an eccentric fellow and I adore him...you kinda reminded me that it's time to pay him a visit. :D

both grilled and breaded. Usually plain. Sometimes with cheese. Just depends. I don't eat hamburger so I have been a chicken man for most of my life. :)

66. Chinese food at the Blue Sky Restaurant in Campbell, CA.
It's not the best I've ever had, and it's not the worst. But when you have a Chinese food Jones, and you're too lazy to cook it yourself, it hits the spot. A lunch-time "rice plate" with soup, broccoli beef, fried rice and an egg roll comes to seven bucks. And it's a BIG plate. The food is very well prepared...not greasy.

Hot Stuff: King Mui, head chef at the Blue Sky restaurant for 10 years, prepares chow mein for the lunch crowd. Those working at the restaurant consider the owners like family. It is tradition for the Ly family to share a New Year's meal with the staff.

I love Chinese food, too. We ate it earlier this week...Shrimp in Lobster Sauce and fried rice. Delicious.

73. I love good cornbread.
My grandmother gave me her recipe for hot-water cornbread. I tried and tried to copy it, but I never can make it quite as good as hers.

But pinto beans cooked until they are falling apart, with a big hunk of hot-water cornbread...that's a good comfort meal.
