What's a good food to make for a group?
I'm responsible for bringing food to our next PTA meeting to feed, say, 25 people or so ... Yes, I know, I live a WILD life these days! :woohoo: ... I think that pizza, chile, soup, and lasagne have already been done this year. I was thinking of chicken enchiladas but am open to suggestions. Thanks! :hi:

8. Go with the old 7 layer tortilla chip dip.
It's not that hard, it keeps well, and if you need variety, you can buy or make guacamole, picante, salsa, etc.

You can even put the cooked & ready ingredients in different bowls and let folks build their own, (which accommodates allergies and vegetarians) and it's relatively inexpensive and easy.

Additional edit: I notice their recipe for fajitas calls for boneless skinless chicken breasts, but you can do the same recipe substitution a much less costly boneless pork butt (Boston Butt). Or, heck, check out some of their other tastey recipes.
