Dinner at the Prophets-Mulligatawny Soup
This is a really good Mulligatawny recipe.

1/4 C butter
2 med. onions, chopped
2/3 Tbsp curry powder
1 med. apple, peeled and diced
1/4 C. all-purpose flour
1/2 tsp. salt
1/8 tsp pepper
6 C. chicken stock
2 C. cubed cooked chicken
2 med. carrots
1 celery stock, diced
1/2 C. cream
1/4 tsp. paprika
1/4 tsp. ground cumin
1/2 tsp. coriander

Saute chicken with paprika, cumin, and corainder, set aside. Melt butter in a 4 qt. saucepan. Add onions, curry powder, and apple, saute until onion is soft. Mix in flour, salt and pepper. Add chicken stock, stir until boiling and soup thickens. Add chicken, carrots, celery, and cream. simmer, covered, until vegetables are tender.

4. Let me tell ya - it's very easy and very tasty!
BTW, EP forgot to mention that this is a recipe that I acquired. This piece of information is important because I do not contribute much to our culinary experiences - he's the chef of this house. However, I found this recipe and impressed him with it the first time I made it. He actually called it "restaurant quality" Mulligatawny which is a high compliment coming from the chef of the house!!
:9 It's sooooo good!

Also, you really should garnish the top with fresh cilantro - don't cook it in because it looses its flavor that way. Just snip enough for each bowl as it is served. It adds a great deal of flavor.
