7. I don't know, but I've experienced the same phenomenon, so
I used to pull them out and run them over the steel every once in a while just for the hell of it.

Now, I use my really nice knives regularly, and keep them super sharp as well. . . I love my knives.

If you keep them in a drawer you open and close a lot the edges could bang against other items in the drawer and get damaged.

Make a sleeve for your chef's knife out of cardboard. Just take some corrugated cardboard and bend it over the dull side, cut it to roughly fit the taper of the knife and tape it together to make a sleeve.

Or buy a knife block from Linens and Things

15. You can purchase blade guards inexpensively
at most of the better kitchen supply stores, such as Sur La Table.

Also, they'll go dull if you haven't sharpened them in the last, say, year and I mean have someone put the edge back on. Not just run them over a steel.
