I just made some stuffed green peppers

I just made some stuffed green peppers
And boy am I looking forward to them! I make them without meat--rice, tomatoes, onions, celery, cheese, toasted almonds, and this time I added some frozen peas and carrots. Some pepper, oregano and basil. A little pasta sauce in the rice, but mostly to surround them and top them. Then a little bread crumbs on top with some more cheese on the very top, and voila! Comfort food!

Anyone else like stuffed peppers? And any who like it without meat? Anyone try it with couscous instead of rice? I was also thinking a very tiny pasta, but will wait until I eat this bunch.

Gonna make some tuna casserole this week as well. With lots of veggies as well--onions, celery, tomatoes, some more frozen peas and carrots, as well as green beans. Perhaps some cheese on top, a little cream.......:)

1. Yummy... sounds great.
I do it with spinach/ricotta mix and breadcrumbs and some parmesan cheese -- they are so yummy and pretty easy to make. You can stuff them with pretty much anything -- brown rice, veggies, cheddar.... HEY, now I'm hungry.

I also love tuna hotdish! My husband can't stand canned tuna, though, so I have to make it with chicken. (I buy chicken in bulk, cook it, cut it up, and put it into the freezer in meal-size amounts so I can make hotdish or whatever on the spur of the moment.)

Tuna hotdish isn't quite the same with chicken. Good, but not the same.

and a little cheese on top before. There might have been more ingredients, but definitely not meat.

You can use leftover chili mixed with rice (and a couple of other ingredients, I think) for stuffed peppers, too. There's a recipe in my vegetarian chili cookbook.

And while you're at it, stuff some banana peppers, too. Mmm. Hot and delicious. Make sure you wear some plastic gloves when you clean them, though! :)

You can stuff them with shrimp or crab meat too or both. If you eat shell fish.
