I only ever go with cheddar, american, mozzarella, provolone, and sometimes gouda.

American for grilled cheese.

Provolone for turkey.

Cheddar for Ham.

Swiss for a Reuben.

Mozzarella for a meatball sub.

We used to get sliced Gouda in Germany, and we'd toast it just enough to melt it onto the salami a bit... YUM!

Yes, I know it isn't "real cheese". But it's what I was raised on for grilled cheese sandwiches. I also put sugar on top of the melted cheese... what can I say? I'm weird. :)

the cheeses i buy most often for sandwiches are provolone, fresh mozzarella, gouda, and sharp cheddar.

Then I'd have to pick a very sharp cheddar. But there are so many marvelous cheeses. Don't forget camembert and brie, and those marvelous blue veined cheeses. The wonderful Italian cheeses. Just bought some morbier, super yummy. Oh geez, I could go on and on, but I won't.

...as long as it's real cheese (i.e. not "American" or any cheese substitute) and can be sliced (i.e. not a crumbly cheese like one of the blues or a soft cheese like Brie), it will do just fine. They're all Gouda.
