I need apple recipes
We went to the orchard and got a ton of apples, but now I don't know what to do with them all. I already made a pie and applesauce. Any suggestions? :shrug:

INGREDIENTS:

* 1 cup butter, room temperature
* 2 cups granulted sugar
* 3 eggs
* 1 1/2 teaspoons vanilla
* 2 1/2 cups all-purpose flour
* 1 teaspoon baking powder
* 1 teaspoon baking soda
* 1/2 teaspoon salt
* 2 1/2 cups peeled chopped fresh apples
* 1 cup coarsely chopped walnuts
* 1 cup golden raisins, or craisins (dried cranberries)

PREPARATION:
In a mixing bowl, cream together the butter and sugar until light. Add the eggs, one at a time, beating after each addition. Stir in the vanilla. Sift together the flour, baking powder, baking soda, and salt, and stir in the creamed butter mixture.

Stir in the chopped apples, raisins/craisins and walnuts. Spread the cake batter into a greased and floured 13x9-inch baking pan, and bake in a 350° oven for 45 minutes, or until a wooden pick or cake tester inserted in center comes out clean. Cool for at least 30 minutes before serving. Serve with whipped cream or a caramel sauce.

9. Re; pie crists...couple ideas that WORK from FoodTV.....
1st) If you have a food processor, it mixes dough like this real quick with a lot less effort than a pastry cutter.
2nd) Swap some of the shortening for frozen butter. Up to a third. What makes pie crust flaky is the slivers of unmixed fat (Butter) that melt as you bake the crust and cause the flour around them to separate and become flakes. The frozen butter does this well because it won't mix readily with the flour, thus leaving little balls of it throughout your dough.
3rd) After you get to the point where the dough is cleaning the bowl and becomes a ball, cut it into the portions you want and chill it in the fridge or freezer. This will make it easier to handle and easier to roll out.
4th) When you roll out the pan liner part and put it into your pie tin, poke a few holes in it with a fork so it won't get bubbles in it and rise off the pan.
5th) WATCH IT CLOSELY as you bake the crust. In a 350 oven it won't take much more than 8-10 minutes for it to become nice and golden brown, NOT DARK BROWN!!

Also, make SURE you put salt in the mix and add a little sugar also. Makes for a nicely sweet crust. If you don't add salt, you'll just have yucky cooked flour tasting crust.

The above experience was gained over the course of two years, making a pie crust every other week or so till i got it right.

truly, the key is the frozen butter. Try it. Enjoy!

19. Then do your best to make the bits of frozen butter small...
like about the size of a BB. Too big of a chunk will tend to soak the surrounding flour and it just doesnt have that flaky quality. You have to work quickly cause you don't want the butter to get so soft that it starts mixing with the flour. Let the shortening do that.

Nothing better than a really good, flaky crust. :9

I've never had a crust bubble up from the bottom on a pie that is filled before baking but I do poke holes in it if baking before filling. I've also seen the suggestion, numerous times, to fill your pie shell with beans during the baking to keep it from bubbling up. Never tried it, tho.

This crust recipe is lo-fat and pretty good to bake for a cold filling pie like lemonade pie:

weight the dough down so it doesnt bubble up. The shortening and butter does have water in it and that is what causes the dough to bubble up....steam.

I've found that if i don't bake the crust before filling and baking again, i tended to get a soggy crust in the middle as the filling soaks the crust and doesnt let it properly cook.

Also, i've done a lattice style top (A BIG pain, but real nice looking) and regular rolled out pie tops. I like to brush them with softened or melted butter and sprinkle with sugar before baking. Brown sugar and cinnamon is a nice touch.

it's fun, old fashioned and there is nothing like fresh tasting applesauce you made youself on the 3rd week of january.

seriousLy though....

appLe stuffed chicken. stuff a chicken as you normaLLy wouLd, but chop up about 3 appLes (depends on the size of the yard bird) with skin intact.

aLso, if you're making a pie, i suggest adding some stripes of carameL in the center. goes great with the brown sugar and cinnamon (hmm, it's been 6+ years since i made a pie from scratch)
edit: i think i may have even put butterscotch in it too.

24. Apples & cinnamon mochi
Cut apples into crazy chunks, throw in a saucepan & add a pinch of salt to bring out the sweetness. Stew for about 20 minutes or til apples are mushy.

Cut mochi into 1 inch squares or grate mochi, throw on top of apples, cover and let mochi melt. Serve hot or let cool to room temp.

29. The quickest apple cake I ever made came from Rachael Ray.
Basically you just mix up a yellow Jiffy cake, according to directions, grease and flour a 8 inch cake pan, peal and slice an apple(I use one and a half) and lay the slices in the bottom of the pan, sprinkle with a little cinnamon, and pour the batter over. Bake for 25-30 minutes at 350. Serve with ice cream or whipped cream, or both.

Wonderful. Or add some chopped apples (dip in lemon juice) to bread stuffing with some onions. Add a bit of nutmeg to the seasoning. Get thick cut pork chops and make a slit in them to form a pocket. Put some stuffing in each pork chop. You'll be a hit at the supper table

Also, it is not hard to make & can apple butter. Get a canning book from the library and be brave!

Anybody with a lotta pears should try makeing pear butter too. You don't even have to peel or seed the pears for pear butter. Just stew them til tender, toss in the blender with a bit of the cooking water and puree. Add the seasoning and sugar and cook a bit then can. Simple and ALWAYS a crowd pleaser.

31.  Quick Apple Cake

1 3/4 cups sifted cake flour
1 teaspoon baking powder
1/2 teaspoon soda
1/2 teaspoon salt
1 cup sugar
1/2 cup melted butter
1 egg
buttermilk
1 teaspoon vanilla extract
2 tart apples peeled and sliced thinly
2 tablespoons sugar mixed with
1 tablespoon cinnamon

Sift the flour, baking powder, soda, salt and 1 cup sugar into a mixing bowl. Pour ¼ Cup of butter into a 1 cup, measuring cup then add the egg. Fill the cup with buttermilk. Pour into the flour mixture and beat vigorously for at least 1 minute or until batter is smooth. Stir in the vanilla. Pour the remaining butter into an ovenproof skillet or baking dish. Pour the batter into the skillet then arrange the apples over the top. Sprinkle over the apples with the cinnamon and sugar mixture. Bake in pre heated oven at 350 degrees for 35 to 40 minutes. Serve hot or allow cooling.
