4. Today it is pickled pigs feet...

Here is a recipe as I know you will want to eat some for yourself!

4 pigs' feet (split in half)
3 cups cider vinegar
1 onion (sliced)
1 tsp crushed red pepper
3 whole cloves
1 bay leaf

Wash the pigs feet thoroughly. Place in a pot with cold
water along with the vinegar. Bring to a boil and skim
off the foam. Add other ingredients and cook over medium
heat until thoroughly done (approximately 2 1/2 hours).

Store in a container along with the liquid. If you have
too much liquid, remove the cooked pigs feet and boil it
down a little. Refrigerate. Serve cold.

7. Stop it! You're making me hungry.
As a kid we made a German sausage made from beef. At that time we could still get cow's heads from the meat lockers in the area and slice off the cheek meat to grind into the mixture. So there were some mornings I would come downstairs to a kitchen full of cow's heads. God's honest truth!

I forgot all about the cows heads after we got done making the sausage. Tasted good too. Now they use roast beef in the mix instead. Makes for a much leaner sausage. Rinderwurst is what it's called. mmmmmmmmm
Great with pancakes!

eat those. YUCKY! People do eat them, though! I would NEVER EVER put a pig's foot in my mouth. :puke: It was just to be silly.

12. Chitlins? HELL NO!!!!
I am not sure what the others are. And I know how disgusting hot dogs are. That is why I prefer not to ever hear about them, b/c I do like them on occassion.

15. Hmmmm well
Tripe is beef stomach. You may have seen it in Menudo (the soup, not the band.)

Sweet Breads are not breads at all, but rather cow glands, and usually taken from a juvenille calf.
