Omelette fillings
I have a sudden urge to eat an omelette. What are your favorite fillings?

I'm leaning toward smoked ham, cheddar cheese, and mushrooms.

1. Onion, pancetta and gruyere cheese.
Or jalapeno, onion, chorizo, bell pepper and pepper jack cheese.

19. it's a type of stewed pork
made with the shoulder. Marinated overnight in garlic, red wine vinegar, salt, bay leaves, cinnamon, and water then slowly boiled until it falls apart.

Tastes like heaven.

11. No kidding?
You gotta try a spinach'n'mushrooms omelette, then....cook up the shrooms and spinach first in yer pan with olive oil. Dump them onto a cutting board, plop the eggs into the pan, cook them, drop in some mozzarella cheese and follow with the spinach and mushrooms.......

Basically, whatever the hell is in the fridge is fair game for an omelette.

I also like heavily garlicked omelettes.

Or instead of bacon, use ham, beef, pork chop leftovers, whatever.

30. 'shrooms and cheese are absolutes...
and I never make an omelette without them. I usually have cheddar, swiss, and mozzarella around, but others will do. Try cream cheese.

Any meat found in the fridge will do. Preferably an unhealthy processed meat. I've used bologna and hot dogs in a pinch. Ground turkey, steak, picking the pork out of leftover Chinese...

Peppers, tomatoes, and/or spinach often find their ways into my omelettes. Even mashed potatoes.
