11. Mr. Scorpio's Famous Apple Coffee Cake Recipe
I've baked this _twice_ and shared it with friends and family. It's a _hit_ folks. And if you want a little fancier (and fattier) frosting, add powdered sugar and orange or lemon juice to about about four big spoonfuls of plain yogurt, mascarpone, cream cheese or smooth ricotta cheese.

This recipe is almost as fine as Mr. Scorpio himself. ;)

Apple Coffee Cake

1/2 cup butter or margarine, softened
2 cups granulated sugar
4 eggs
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
5 cups peeled and chopped apples
1 teaspoon vanilla extract
1 1/2 tablespoons granulated sugar
1/2 teaspoon ground cinnamon

Beat butter at medium speed of electric mixer. Gradually add sugar; beat well. Add eggs, one at a time, beating after each addition.

Combine flour, baking powder and salt; add to creamed mixture. Stir in apple and vanilla extract. Spoon batter into a greased and floured 13 x 9-inch pan.

Combine sugar and ground cinnamon; sprinkle over cake batter. Bake at 350 degrees F for 45 minutes or until a wooden pick inserted in center comes out clean.

21. Aargau Carrot Cake.
Mr. S,

Here's the Swiss carrot cake recipe that I typically make. It's very light and yummy, and pretty as well, expecially if you can find marzipan carrots for the top of it. I use orange juice and orange rind instead of lemon, and when I make the glaze, I use Philadelphia cream cheese (or mascarpone, or ricotta, or whatever cream cheese I have in the fridge), orange juice and powdered sugar for a sort of a sour frosting, topped with marzipan carrots. (Also, I bake it in a tube pan instead of a 9-inch cake pan.)

Aargau Carrot Cake

3 eggs
3/4 cup white sugar
1 1/2 teaspoons grated lemon zest
2 tablespoons fresh lemon juice
1 cup grated carrots
1 cup ground almonds
1/4 cup all-purpose flour
1 teaspoon baking powder
1 pinch salt

Icing Recipe No. 1
3/4 cup confectioners' sugar
1 tablespoon lemon juice (orange juice can best substituted)

Icing Recipe No. 2
3/4 cup confectioners' sugar (or enough to make a smooth, thick icing)
3-4 Tbsp. quark, ricotta cheese, mascarpone or cream cheese
1 Tablespoon lemon juice or orange juice

Directions
1 Prepare the 9 inch cake pan by rubbing the inside well
with a drop of cooking oil and then scattering a little
flour over it. Preheat oven to 360 degrees F (180 degrees C).
2 Separate the eggs and beat the yolks into the sugar
thoroughly. Add lemon juice and grated rind, carrots, almonds,
flour, baking powder and salt. Mix well.
3 Beat egg whites until stiff and fold into cake mixture.
Pour batter into 9 inch cake pan.
4 Bake at 360 degrees F (180 degrees C) for 45 minutes.
5 After cooling, this cake is often iced with Icing Recipe No. 1: 3/4 cup confectioners' sugar into which is beaten 1 tablespoon lemon juice, although I prefer Icing Recipe No. 2.
6. Little marzipan carrots are the traditional decoration. (I would happily send these to Mr. Scorpio, if he asked. ;) )
