What's for dinner?
I'm having Iowa pork chops, homemade garlic mashed potatoes, homegrown green beans from Grandma, and salad. :D

3. Snapper Provencal, Couscous and Green Beans
With a nice crusty bread and Chardonnay

Here is the easy and tasty recipe:


Preheat oven to 350 degrees


1-1/2 pounds Red Snapper fillets (you can substitute sea bass, tilapia or any firm white fleshed fish)
1 onion sliced thinly into rings
2 cloves garlic, minced
1 tbsp finely minced orange peel
1 tablespoon fresh chopped rosemary
1 14 oz can diced tomatoes
2 teaspoons capers
1/4 cup orange juice
olive oil

Put fish in Pyrex baking dish- drizzle with olive oil0 bake about 15 minutes at 350 degrees

Meanwhile, saute sliced onion, garlic, orange peel and rosemary in about 1 tbsp olive oil in skillet till onions are soft and translucent but not browned.

Add tomatoes and orange juice and bring to biol. Lower heat, add capers and simmer while fish is baking. When the 15 minutes are up, pour tomato mixture over the fish and bake 5 minutes longer. That's it- you're done.

Fluff your couscous, cut up your bread, pour your wine and enjoy!

7. Mom had the day off from work, so she decided she wanted to cook.
My cousin who lives with us usually does the cooking, but today is her birthday, so Mom decided she'd cook dinner. And given what an awesome cook she is, I never ever complain. :D

btw...what exactly are Iowa pork chops, is that a specific recipe or are the pigs from Iowa?

12. Already had dinner...
It was BBQ Sandwiches, with Corn on the Cob and french fries and baked beans with sweet ice tea. Mmmmmmmmmm
