nice recipe in case you ever want to make it...



1 (15-ounce) package refrigerated pie crusts

1 1/2 cups shredded Swiss cheese

2 scallions, sliced

1 (2-ounce) jar chopped pimientos

2 eggs

1/2 cup milk

1/4 teaspoon salt

Dash nutmeg

Preheat the oven to 375 degrees. Spray 24 miniature muffin cups with no-stick cooking spray. Place unrolled pie crust on work surface. With floured 21/2-inch round cookie cutter, cut 12 rounds. Repeat with other pie crust.

Press 1 dough round in bottom and up side of each muffin cup. Place 1 tablespoon cheese in each cup. Top each with a few scallion slices and pimiento pieces.

In a 2-cup measure, combine eggs, milk, salt and nutmeg; beat well with a fork. Pour into crusts, filling each to within 1/4 inch of top. Bake 25 to 30 minutes until golden. Cool slightly; lift quiches from muffin cups with the tip of a knife. Serve warm. Makes 24 mini-quiches.

Per mini-quiche: 119 calories, 60 percent calories from fat, 8 grams total fat, 3 grams saturated fat, 21 milligrams cholesterol, 8 grams carbohydrates, .07 gram total fiber, .34 gram total sugars, 7 grams net carbs, 3 grams protein, 125 milligrams sodium.
