...there are just too many good ones, and variety is what I love about vegetables. Can't wait for the farmer's markets to open now!

26. Like most here, I too regard avocado as a fruit.
however, I always season it as a vegetable --- salt, pepper, etc. However in the army, I once watched a Filipino season it as a "breakfast fruit" --- he added sugar and milk to it. (We were on KP together and were able to get all the avocados we wanted). I tried it myelf and liked it, but I never tried it that way again.

Broccoli, spinach, green beans, carrots and peas all rank pretty highly. And tomatoes, if one is counting them as vegetables. Well-prepared asparagus is great too.

on the basis of how it was customarily prepared --- boiled until it was so limp, it made me feel drowsy just contemplating it.

But years back while living in Japan, I watched my wife preparing spinach (horenso). She washed it THOROUGHLY, cut it into short lengths, and just barely "cooked" it. It ended up looking GREEN and still had crispness to it. She then roasted sesame seeds and ground them, added shoyu and few other things I've forgotten. It was then chilled and served; mainly as an appetizer (a sort of sunomono), although it was a taste delight by itself.

Here in Seatle, I try my hand at it occasionally. I use a pressure cooker, and the instant it reaches pressure, I plunge the pot into cold water. It's not quite as good as I can recall (what ever is?) but it's stiil delicious.

On edit: Raw spinach is also quite edible, so thare is no great harm in "undercooking" it. Try it!

29. Super fresh broccoli, steamed just right, covered
with lots of butter (or other acceptable substitute) and drenched with lots of fresh lemon juice! Heaven...


Freshly harvested corn on the cob, asparagus are also big favorites...
