... almost 80% of world's eggplant production is in Asia. New Jersey grows about 8,000 tons of eggplant per year, putting it at about fourth in the nation (California, #1 in the nation, grows about 13,000 tons). In actuality, NJ eggplant production is about 0.1% of the world's total.
