a couple of teaspoons of cottage cheese, some really crispy bacon, 3 large strawberries and 1/3 of a banana.

it's not much but it WILL be good.

3. I don't want to cook.
So, maybe pasta with broccoli and red bell peppers dressed with a little garlic and red pepper flakes sauteed in olive oil. And there is one lonely left over piece of duck sausage in the freezer I could add in.

But I still don't want to cook.

5. Pancakes and bacon
Originally was supposed to be chicken fried steak, mashed taters & gravy and green beans but...my dogs decided to try to kill each other this morning, I intervened and one of them decided my hand looked like food. He bit me right in the center of my hand and it is just painful beyond belief. I can't close my hand and the pain is all the way to my elbow so easy dinner tonight.

I use lots of cumin, chili powder, garlic and onions, but go easy on the tabasco.

I'll be making salmon and asparagus. Getting my 3 yr old to eat asparagus is a chore, but he loves the fish. The fiancee is just happy she doesn't have to cook....

Curried Kidney Beans

1 chopped onion
2 (16 ounces) cans red kidney beans, drained
1/2 cup crushed tomatoes (fresh or canned)
1 tablespoon oil
Seasonings
1 teaspoon chopped ginger
1 teaspoon cumin powder
1 teaspoon coriander powder
1/2 teaspoon red chili powder
1 teaspoon garam masala
1/2 teaspoon black pepper
Garnish
2 tablespoons chopped green coriander

Heat the oil in a saucepan on medium to high heat.
Add chopped onions and stir until they are translucent.
Add ginger, cumin powder and coriander powder.
Stir for a minute.
Add the tomatoes, kidney beans, and red chili powder.
Add water as needed.
Boil and let it simmer for 15 minutes until the gravy is thick.
Add black pepper and garam masala to make it spicy.
Serve garnished with green coriander.

Apricot-Raisin Chutney

INGREDIENTS

4 cups dried apricots, coarsely chopped
4 cups hot water
10 large garlic cloves, chopped
One 3 inch piece of fresh ginger, peeled and chopped, or 6 pieces crystallized ginger, chopped
1-1/4 cups cider vinegar
2 cups sugar
2/3 cup dark brown sugar, packed
1 tbsp. mustard seeds
1/2 tsp. cayenne pepper
1/4 tsp. salt
1 cup golden raisins


Step 1
Place the chopped apricots in a bowl with the hot water. Let them soak for at least 1 hour.

Step 2
Chop the garlic and ginger. Put in an aluminum or other nonreactive pot and add a bit of the vinegar to make a paste. Add the remaining vinegar, the sugars, the apricots and their liquid, and the mustard seeds, cayenne and salt.

Step 3
Bring to a boil and allow the mixture to simmer for 45 minutes, stirring occasionally to keep it from scorching. Stir in the raisins and continue to simmer until the chutney has thickened and appears glossy.

Step 4
The chutney, which goes well with ham, can be stored up to several months in the refrigerator. Makes 6 cups.

Savory Potato Patties

5 russet potatoes
6 T. milk
2 c. chopped onions
6 cloves of garlic, pressed
1 T. veg oil
1 t. curry powder
1 t. cumin
1 t. turmeric
salt and pepper to taste
2 egg whites (I used egg substitute)
3 T. water
1 cup bread crumbs

Boil the potatoes in their skins til tender. Cool, then peel and add milk and mash. Meanwhile, saute the onions and garlic in the oil til translucent. Add the spices and saute for a few minutes more. Mix into the potatoes. Form potatoes into 2" diameter and 1/2" thick patties. Dip in an egg wash of eggs and water. Coat in bread crumbs. Fry in a little bit of veg. oil in a non-stick pan til crisp on both sides.

Banana Raita

2. cups yogurt
1/2 c. shredded coconut
2 ripe bananas, peeled and cut into 1/4" thick slices
2. T. toasted, slivered almonds
1/2 cup raisins
1 T. sugar

Mix all together and chill.

33. Whatever I can fix
in a microwave, a crockpot, on an outdoor propane grill or take straight from the refrigerator. We're remodeling the kitchen and it's in the process of being ripped out. We'll be "urban camping" for the next month.

I think tonight's going to be a spinach salad with orange, red onion and some leftover chicken sliced in.
