Part of his "defense against sanity" program or something.

You should definitely try lobster! Especially if you can get to Maine, and get it when it's fresh at a lobster pound (an eatery, not actually a "pound" like "dog pound"). Best lobster I've ever had! So good, in fact, that I've stopped eating lobster anywhere else, because it never measures up to what I had there.

But lobster is also rich, and not quite the thing that one could eat every day.

9. There's so much that isn't really available any longer...
... or isn't really good for one because of mercury levels or red tide, or whatever, but, discounting those things, there's:

1) Abalone. Delicious.

2) Grilled swordfish steak. Same.

3) Thai-style Gulf prawns. To die for.

4) Grilled red snapper.

5) Wild salmon. (Which I cook with great respect. Grill the fillet skin side down, just for a few minutes, remove. Put in a dutch oven with some white wine and let poach. Meanwhile, make a sauce from southwest cheviche--fish bits, shrimp and salsa--butter and light cream. When the salmon is flaky, remove and top with sauce. Killer.)

6) Bouillabaise--little bit of everything--white fish fillets, clams, oysters, mussels, shrimp, scallops, fresh peppers, shredded scallions, habanero. Ooooohhhh.

29. It was a get together at an Eagle's Aerie.
The last time I cooked for them I made what I call Cajun Chili. I put shrimp, crab, and andoulle sausage in that. They loved it!

That's me holding the chop sticks, BTY

Fresh squid

* Hold the body of the squid with one hand and the head with the other; pull gently to separate.
* Remove the intestines and the quill, which is clear and plastic-like, of the fresh squid.
* Rinse the body inside-out, under cold running water; pat dry.

* Remove tentacles from head, just below the eyes; cut into individual pieces.
* Remove brownish or purplish outer skin from the body; cut the flesh into 1/4-inch <1-cm> rings.
* Mix together flour, salt and pepper on a sheet of wax paper.
* Toss rings and tentacles into flour mixture, until coated.
* Preheat oil to 350°F <180°C>; fry the squid pieces, about 6 at a time, saving tentacles until last.
* Remove pieces from the oil when brown and crisp, using a slotted spoon; drain onto paper toweling.
* Sprinkle lightly with salt; repeat with the remaining squid pieces.
* Pieces should take approximately 3 minutes to cook.
* Arrange onto serving plates; garnish with lemon wedges and parsley.

I've never had oysters or urchins, and mussels make me sicker than you could imagine.

But crab, lobster, scallops, shrimp..... how the heck can anyone choose? I have to order a fisherman's platter, because I can never pick just one.

37. Interesting factoid about lobster
A few hundred years ago, lobsters in New England were so plentiful they were considered "trash fish." They fed them to the servants and used them for fertilizer. Poor children were forced to eat lobster, day after day.
