Oh, you mean if you DON'T drink it!

Re-cork it promptly and store it on its side so the cork stays wet and keep it in the coldest part of the fridge, and most wines should be good for a couple of weeks.

There are nitrogen injection re-corking kits you can buy that can extend that time to years.

8. Have a taste
see how vile it is. If it is really bad, throw it out.

If has just suffered a bit from aging, make sangria or wine cooler out of it.

Fruit juice and triple sec will fix almost any bad wine

All kidding aside, wine starts to break down when oxygen hits it. Oxidized wine smells vaguely like fingernail polish remover. If it is an 'old' (aged) bottle of red, it could vary from 5 minutes to several hours. I've had one perfect when opened, and then witnessed the slow death of it over several minutes. For a current vintage of table wine (wine store, grocery store, whatever), it could last one day to one week -- but don't count on anything past the day you open it. If it smells 'off' it IS off.

27. As alcohol evaporates add Vodka-as it sours add Fruit juice/triple sec-use
on salad after it turns to vinegar.

But better is just drink it up in 2 to 3 days, keeping it corked and in the fridge.
