Help me fix something to eat. I've got avocados, tomatoes,
garlic, onion, cilantro... but no chips or bread or nuthin'. It's snowing here, I don't feel like going out. All I've for a carrier for the said yummy avocados, etc., is spring roll wrappers (indredients: water, rice, salt). What kind of yummy snack can I make? I am cooking-inventiveness-challenged.

Help!

4. Well, do you have any limes or lime juice?
Failing that, lemons?

Make a citrus vinagarette, chop everything up in large pieces, pour the vinigarette over it, mix well, let it sit for an hour.

Then, take the wrappers, cut them into strips, deep-fry them until crispy and let cool. Use them as garnish/croutons.

If you don't have the citrus, do you have rice wine vinegar? Use that. Or white wine vinegar.

7. yup, limes and a lemon...
and olive oil and I think even some basalmic vinegar. Hmm. Sounds good, I like the crispy crunchy crouton aspect of it; I love avocados with some sort of bread or chips ...

I've never prepared a spring roll..but we sell them at the co-op where I work.

And, yeah, if you have eggs, you could scramble some of those in there, too.

P.S. I had to go back out in the snow because I forgot to put the pineapples in the cooler when I was closing up work. It was worth it, though, cause I would have heard about it tomorrow!

Mix up all said ingredients -- to your taste as far as how much of each. Wrap it up in the spring roll wrappers and quick fry or steam. Even better with a little soy sauce if you've got it -- or some sour cream?
OR
Cut the wrappers into pieces, quick fry, and use those as a carrier for your other stuff!
Now I'm hungry . . .

10. yup, have soy sauce, too...

also have some good sesame oil for a quick fry. Yum!

you can make a nice salad out of avocadoes, cheese, tomatoes -- if you've got any spinach, lettuce, carrots, etc., put them in too -- oh yes, and nuts. Make a dressing out of oil and/or vinegar, with some pepper and cilantro in there for seasoning.


If you have any packaged chicken noodle soup mix (Lipton etc.), cook it up with garlic tomatoes, a bit of vinegar or lime/lemon juice, black pepper and some cilantro -- and maybe a dab of peanut butter if you've got it. Home-made Thai-style hot and sour? I did this a couple of years ago when I had nothing else in the house, and I liked it so much I buy the ingredients on purpose now.

12. that Thai dish sounds great...
we just used our last bit of peanut butter for Thai-style noodles my husband makes (wheat thin spaghetti, lotta peanut butter, a little honey, green onions and shredded carrots - very good stuff) but I do have cheese. Gotta go get the husband out of his workshop and see which of these sounds good to him!

9. Ok ..... here it is ....
When you have avocadoes, tomatos AND cilantro .. There is ONLY ONE THING YOU CAN DO ....

You MUST make Guacamole ! ....

It is the law ....

So: ... here is what you do: take the springwrappers, and prepare them as for eggrolls ... except you wont fill them ... but do cook them, keeping them flat, like tortillas .... until slightly crispy ... you may even cut them before hand into fourths or sixths ... like tortilla chips ...

Careful .. dont burn them ....


Now: ... DIP your springroll wrapper chips into your deliciously fresh guacamole .... and you ARE in heaven ....

Honest ....

Ole' ! ....

13. yes, I love love love guacamole...
will probably make it by default and then do something interesting with the spring rolls, either make them into "chips" or fry-em up like a chimichanga, only with guacamole inside.

Must get busy!

(PS .. Im not sure about the 'hot guacamole' inside a chimichanga idea .... but DEFINTELY you could make a chimichanga with somethin else, like cheese or beans, then slather it with the Guacamole .....

have an orange handy? make a salsa and add a bit of the orange juice and some zest. Poach the fish and serve the avacados on the side with some salsa

17. Anything you like. Have used frozen cod, sole, whitefish, turbot
and fresh tuna. Of course the fresh tuna was best and we grilled it outdoors, but this far north, I take what I can get for fish. I just happen to be fond of cod and sole. My daughter makes it with shark.

Tangelos work as well or better than orange too. The addition of the fruit just seems to really work with the fish. A little seasoned rice and the avocado and supper is great!
