But I had a Meatball sub,chips and cookies,I did wash it down with a Diet Coke so I should be ok right?

12. Here are the basic ingredients..you can do anything w/them
One can of Old El Paso Enchilada Sauce..mild or medium..hot if you live in the SW!:-)& about 14-16 oz for 2-4 peeps

Kraft 4 Mexican Cheese (already shredded finely)

One half of a good sized white onion (yellow and purple work too, just happened to be what I had on hand since it was cheaper or in better shape than yellow o' red ones, diced either by hand or other means (we did it by hand)

One small can of green chiles chopped (could be O ELP or another brand)

Manny white or yellow corn tortillas, soft, around 8-12, packaged in a concealed plastic bag like cheese or another brand; likewise, same characteristics..blue is best, but expensive

Casserole dish. If you have a quiche dish, this works fine, but you have to tear up torillas to cover the largeness, but perhaps shallowness of the dish design as well.

I'm not the best at giving details overwise, but..

Have the oven preheating at 350 deg.
If you don't have a covered dish available to bake (such as Corning), then plan to use your sauce from the can differently and turn down the heat when you bake. I didn't have one today, and I used a quiche baking pan.

I also quartered the round slices, as well as putting 2 overlapping ones

Laying the following:

those dipped in sauce with cheese, chilles, and onion on top of each
4 times

Put extra cheese on top

back at 350 for 25 min, then turn down to 250 deg
put on last part of cheese and sauce on the sides

Back for 10 more min

More like a pie...and yum yum...

13. We went out for my husband's birthday (to Texas Roadhouse).
I had a 6-oz filet, vegetables, and salad. He had ribs, fries, and beans. The little kids ate bread and mac & cheese. My mother-in-law had salmon, vegetables, and salad. My teenager had ribs, fries, and salad. Her boyfriend had a t-bone steak, beans, and baked potato.

After dinner, we came home for homemade "Choco-holic" cake and vanilla bean ice cream.
