3. Easy, easy recipe--bean & ham soup!
Very hearty, great cold-weather food.

one bag of dried small white beans (rinse well)
one carrot
2 tablespoons of olive oil
1/2 onion
12 oz. ham steak
salt
pepper (I prefer white pepper in this)
couple of bay leaves

Finely chop carrot and onion. Heat the olive oil in a stockpot, and saute the veggies for about 5 minutes. Dice the ham steak, trimming the fat (but keep the marrow bone). Add about 3 quarts of water, the diced ham, beans and bay leaves. Cook at a gentle boil for 30 minutes, then reduce to a simmer for a few hours. I like to cook it uncovered so that some of the water evaporates as it cooks and the starch in the beans starts to thicken the liquid (you'll need to replenish a cup at a time to make sure it doesn't get too thick). Salt and pepper to taste.

This will feed two people for 2 to 3 meals (and it heats up well--add a little water each time you re-heat, as the starch will thicken considerably). Add a nice loaf of crusty bread & a glass of your favorite beer, and you've got a poor man's feast.

4. Cuban Black Beans and Rice
2 tablespoons olive oil
2 glove garlic
1 green pepper -- chopped
2 cups black beans -- cooked
1/4 teaspoon oregano
1 tablespoon white vinegar
2 pimientos -- minced
salt
pepper
3 cups rice -- cooked

(habichuelas y arroz Cubano)

Heat the oil in a skillet, add the green pepper and garlic and sauté' for about 3 minutes.

Stir in beans, oregano, vinegar, and pimientos. Add salt and pepper to taste.

Reduce the heat, cover and simmer for 5 minutes. Spoon over cooked rice and serve.

5. Black beans:
1 can black beans
chopped red onion
garlic
mixed pepper strips

In a frying pan, fry garlic and red onion (as much as you like)
in a little olive oil. I use spray and a non-stick pan.
When that's ready, add beans. Cook on low about 15 minutes. Top on for wet beans, top off for dryer beans

I get frozen mixed pepper strips and use a big handful. Thaw in the microwave. add a big handful. Salt n pepper to taste. Easy cheap quick mmm mmm good! :)

12. Pasta e fagioli
You take 2 14 ounce cans of Kidney beans (or Cannelloni beans if you got 'em) and rinse well. Mince up some garlic and onion and sautee with a little olive oil in a pot. Toss in about 5 cups of chicken broth and the beans. Put about four sprigs of thyme, a sprig of rosemary, and a bay leaf into a bouquet garnier (that's a little cheesecloth bag tied with kitchen twine to you and me) and a can of tomato paste. Add a few slices of pancetta cut up small (you can skip this if you'd rather). Toss in some red pepper flakes and some fresh ground black pepper. Bring to a boil and simmer for about ten minutes. Then, pull out a cup of beans with the broth and let cool for five or ten minutes. While it's cooling, add about 3/4 of ditalini pasta and put the lid back on. Once your cup of beans and broth are cooled, blend it together well (careful, hot liquids will expand!) and put back into the pot. Stir well. Serve with a crusty baguette and freshly grated parma. Garnish with red pepper flakes and more black pepper if desired.

13. Black Bean Chili
~ 2 Cans of black beans (don't drain them)
~ 1 can of diced tomatoes with jalepenos (don't drain these either)
~ 1/2 package of old el pase taco seasoning
~ 1 chopped onion
~ 1 can creamed corn
~ seasonings as you like

Mix it all together in a large saucepan and cook on low-med for an hour. It is so hearty and yummy and SO easy and quick!
