what's the best meat combo for jambalaya?
I'm getting tired of sausage and chicken. And I'm kinda scared of alligator. ;)

And if you have a great jambalaya recipe, I invite you to post it!

I'm not sure where to gator. The truckstop up the road (no kidding) used to have a sign out that they sold it. Haven't seen the sign lately but maybe they still do.

Hell, I've eaten pork brains... reckon I can stomach gator. :)

Have you ever tried Zaterain's jambalaya mix? It's a great shortcut. But even if you don't need the shortcut, this website has some really different ideas about what to add to basic jambalaya, like...ham and eggs!

6. haven't used their jambalaya mix
I have tried their red beans and rice mix. While it tastes nothing like real rb&r, it's pretty tasty.

I don't know about egg jambalaya, but I won't rule it out until I try it. :crazy:

I haven't had any shrimp in a long time. Used to love 'em. I don't know why I went on the shrimp wagon. :)

People have told me it's pretty good, and easier to make than traditionial jambalaya.

10. I use...
... smaller shrimp, andouille sausage (if I can get it) and the base from long-simmered pork hocks (when they're falling apart, the meat can be stripped off and returned to the pot).

That seems to do just fine. :)

11. two methods:
dark meat chicken, shrimp, oyster, and kielbasa/andouille if straight roux,
or
boston butt and andouille/kielbasa if tomato based.

serve over rice with pickled cabbage. ayyyyyyy-whooooooooo!

12. Jambalaya, like Gumbo, is a "what's around" sort of dish
So, what do you like?

I had shrimp, chicken, turkey (a another alternative turkey gumbo for those leftovers), sausage (of every imaginable kind), alligator, tasso, ham.
