I'd love to know how it's done

1. Generally with digital instruments
attached to computer. Converting between midi and digital audio (like mp3) is pretty difficult, as midi files contain nothing more than, essentially, sheet music, that your sound card interprets itself.

2. I use a program called Noteworthy Composer,
which is fine if you read music. Otherwise, I can't offer you much help.
